Double Chocolate Chip and Pecan Muffins

Breakfast? Seriously?

I am not an anything goes for breakfast type person. To me chocolate muffins are just a little lower on the scale than cheesecake for breakfast – not that THAT hasn’t been done here before. Once in awhile a special treat is a nice surprise, though. These are perfect for that – moist, chocolaty, and topped with a sweet butter glaze and toasted pecans. There are just enough chocolate chips to give you a punch of chocolate flavor in each bite. I don’t add pecans to the inside because I don’t like the texture but you certainly could. Pretzel Rolls

Pretzels are delicious – they are one of my favorite snack foods. I like all kinds of pretzels but I am especially fond of the big, warm, chewy, soft pretzels with a thin line of yellow mustard all the way around it. I don’t much like the ones at the malls because they are too big, don’t have the right texture, and don’t remind me so much of the ones that I used to get outside Grants.

Banana Chocolate Chip Muffins

My eldest daughter loves banana chocolate chip bread. I usually try to make a loaf of it for her a couple of times a year but time doesn’t always allow it. There is a wholesome sweetness to banana muffins and when it is paired with decadent chocolate and a generous scoop of pecans… well, these are just so good.

I don’t always have the really ripe bananas on hand that I like to use. We can go through huge amounts of that particular fruit in a very short period of time around here. Continue reading

Gingerbread Waffles for Autumn Brunch

Or gingerbread waffles for an autumn breakfast – either way they are an out of the ordinary treat.

I have always loved gingerbread. Maybe it started with the million times I made my parents read the Gingerbread Man to me… maybe it was the Hansel and Gretel story… Maybe it was the gorgeous Christmas windows in John Wanamaker’s in downtown Philadelphia that depicted Victorian ladies rolling out gingerbread for excited children.
