Old Fashioned Stuffed Bell Peppers

Old fashioned stuffed bell peppers were a staple in our family when I was a kid and they find the way onto my family’s table now. They are an inexpensive comfort food that can be made in the oven, crockpot, or top of stove. There are a lot of variations but here is how I like them.

Stuffed peppers were a year ’round meal in our house. My parents had both reached their teen years during the Great Depression (ever wonder what was so great about it?) and both being from small farms in the extremely fertile “thumb” of Michigan they were both avid gardeners. Easy Eggplant Parmesan Recipe that Will Knock Your Socks Off

I love Eggplant Parmesan. I don’t eat it very much anymore because, at the moment, I am the only one in the house that likes it. My eldest daughter and her husband love it so I don’t make it unless they are going to be around to help eat it.

Eggplant is pretty easy to grow, at least here in Texas. If you have a garden I recommend adding an eggplant (is that eggplant plant? eggplant bush?). The flavor when it is fresh is delicate and addictive – not a bit bitter.

Pizza Casserole – Super Fast and Family Friendly

Who doesn’t like pizza?

Yeah, the silence is deafening. There is something about gooey cheese, tangy tomato sauce, and carby-bready goodenss that rocks us right down to our toes. At least, most of us.
