Ingredients

  • 30 ounces frozen shredded hash brown potatoes
  • ½ cup onion, diced
  • 2 cups cubed cooked chicken, leftover or rotisserie is great
  • 8 ounces cheddar cheese, shredded
  • 16 ounces sour cream
  • 10.75 ounces condensed cream of chicken soup
  • 1 ounce ranch dressing mix
  • 2 cups Corn Flakes, crushed
  • 1 tablespoon butter, melted
  • green onions, sliced - for garnish

Instructions

  • Preheat oven to 375 degrees.
  • Break up any clumps of hash brown potatoes. Add hash browns, onion, chicken, and shredded cheese to a large mixing bowl.
  • Mix well.
  • In a small bowl, combine the sour cream, condensed soup, and ranch dressing mix.
  • Whisk until smooth.
  • Pour this mixture over the potato mixture and fold in until everything is covered in sauce.
  • Spoon potato mixture into a 9x13x2 inch baking dish that's been sprayed with no-stick cooking spray.
  • Bake for 45 minutes.
  • In a small bowl, combine the crushed Corn Flakes with the melted butter.
  • Toss to coat.
  • Spread the cornflake mixture over the top of the casserole and bake for 10 to 15 more minutes or until golden brown and bubbly around the edges.
  • Sprinkle with green onions before serving.

🔪 How to make hash brown chicken casserole

This recipe was born in the glorious era when nobody apologized for using cream soup, frozen potatoes, or enough cheese to empty the dairy aisle.

  1. Dump everything except the Corn Flakes and butter into a big bowl and stir until every shred of potato and every piece of chicken gets coated in the creamy sauce.
  2. Spread it into a greased 9x13-inch baking dish. Bake for about 45 minutes, until it's hot, bubbling around the edges, and smells like everybody's about to wander into the kitchen asking when dinner's ready.
  3. While the casserole bakes, stir the crushed Corn Flakes with the melted butter until every crumb gets a little buttery love.
  4. Scatter the topping over the casserole and pop it back in the oven for another 10 to 15 minutes, just until it's golden, crunchy, and practically begging for a serving spoon. Give it 5 minutes to settle before digging in... if your family will let you.

😱 What can go wrong (and how to fix it)

🍗 My casserole is watery.

Frozen hash browns release a little extra water as they melt in the oven. If your sauce looks a bit thin don't worry-letting it bake a few more minutes before adding the topping will help that extra moisture evaporate.

🍗 The topping burned.

Corn Flakes brown fast. Wait until the casserole has baked for about 45 minutes before adding the buttery topping, then return it to the oven just long enough for it to turn golden.

🍗 The filling seems runny.

Don't panic. Let the casserole rest for 5 to 10 minutes after it comes out of the oven. It'll thicken as it cools, making it much easier to serve.

🍗 The cheese didn't melt smoothly.

Pre-shredded cheese contains anti-caking agents that can make the sauce a little grainy. Freshly shredded cheddar melts into a creamier casserole.

🍗 It tastes too salty.

Cream of chicken soup, Ranch seasoning, and cheddar all bring plenty of salt to the party. Taste the mixture before adding any extra seasoning, and you probably won't need another pinch. You can also use reduced salt products.

🍗 The topping isn't crispy.

Make sure every bit of the crushed Corn Flakes gets coated with melted butter before sprinkling them over the casserole. That's the secret to that buttery crunch everyone reaches for first.

Can I freeze this casserole?

Yes! You can freeze it before or after baking. Wrap it well and freeze for up to 3 months. If you're freezing it unbaked, leave off the topping and add it just before baking for the best texture.

Can I use cream cheese instead of sour cream?

Sure, you can use cream cheese in place of sour cream for a richer flavor. However, cream cheese is thicker than sour cream so it needs to be thinned. You can use 2 tablespoons of buttermilk, milk, or water.
