🧾 Ingredients for cheesy chicken bubble up
- Cooked chicken breast or chicken thighs make this recipe a great way to use up leftover chicken.
- Monterey Jack or Pepper Jack cheese make it gooey and cheesy - use whichever you prefer.
- The Ranch seasoning gives this chicken casserole plenty of flavor.
- Cream of chicken soup acts as a binder and gives the dish more chicken flavor.
- Sour cream adds creaminess. If you're out of sour cream you can use 4 ounces of cream cheese mixed with ¼ cup of milk.
- Canned chiles aren't usually too spicy but they add a lot of southwestern flavor.
- Cilantro is optional - some people dislike it. If you don't want to use cilantro try green onions.

Notes
-
- Be sure to use cooked chicken. Rotisserie chicken works great!
- Buy whole-fat sour cream. Reduced-fat versions aren’t as creamy and tend to split while baking.
-
- Always, always, always shred your cheese from a block!
-
- Make sure you cut up the biscuits instead of leaving them whole so everything cooks evenly.

🔪How to make chile chicken bubble-up casserole
Combine the chicken, Ranch, condensed soup, and sour cream.
Add the chiles and a cup of shredded cheese.
Gently stir the biscuit pieces into the mixture.
Spoon the mixture into the baking dish and top with cheese.
What is a bubble-up bake?
It’s called a bubble-up bake because of the way it cooks in the oven. When you toss those biscuit dough pieces into the dish, they start all soft and doughy. As the dish bakes, those biscuits puff up and "bubble up" through the cheesy sauce.

Made this last night with a few modifications. Used Cream of mushroom soup and added mushrooms, didn't have canned biscuits but had frozen biscuits so I thawed and cut them into 4ths. Husband and I both loved the recipe. Will definitely make it again.
