  1. Mix together the chicken soup, sour cream, Rotel, black beans, taco seasoning, and chicken. 
  2. Crush the tortilla chips and then spread half of the tortilla chips on the bottom of the pan.
  3. Layer half of the chicken mixture, tortilla chips, and cheese mixture.
  4. Bake this easy chicken taco casserole at 350 degrees in a casserole dish covered with foil.

Store leftovers covered with plastic wrap or in an airtight container in the refrigerator for up to 3 days.

You can also freeze this chicken taco bake for up to 3 months.

  • Replace the shredded with cooked taco meat, seasoned ground beef, or leftover Mexican pork.
  • I prefer cubed chicken over shredded chicken but either is fine.
  • If you are a fan of spicy foods use Hot Rotel and Spicy Doritos to make your casserole.
  • Refried beans make a great addition to this casserole.
  • Cooked Spanish rice is another delicious addition to this dish.

💭 Tips

Expert Tip: I often use Nacho flavored Doritos in this casserole but try different flavors of chips!

  • This recipe is an excellent way to use leftover rotisserie chicken, just make sure that it is a neutral flavor.
  • You can also use some of the tequila lime chicken for this recipe.
  • If you are not a fan of cilantro feel free to leave it out.
  • I like to add toppings such as lettuce, sour cream, diced tomatoes, green chilies, black olives, and extra shredded cheese when serving this dish.
  • Next time, add in fresh bell peppers when layering your casserole dish for extra flavor and color.
  • Salsa or even salsa verde can be used in place of the Rotel if you don't have it on hand.

Equipment Needed

  • Casserole Dish

Ingredients

  • 21.5 ounces cream of chicken soup
  • 1½ cups sour cream
  • 14 ounces RoTel
  • 15 ounces black beans, rinsed and drained
  • 1 ounce taco seasoning
  • 4 boneless skinless chicken breasts, cooked and shredded (or cubed)
  • 12 ounces tortilla chips, crushed
  • 2 cups shredded cheddar cheese, divided
  • ¼ cup green onions, sliced
  • ¼ cup cilantro, chopped (optional)

Instructions

  • Preheat oven to 350 degrees.
  • Spray a 9 x 13 inch baking pan with no stick cooking spray.
  • In a large bowl combine the chicken soup, sour cream, RoTel, black beans, taco seasoning and chicken.
  • Set aside.
  • Coarsely crush the tortilla chips and spread half of them on the bottom of the prepared dish.
  • Spread half of the chicken mixture over the tortillas.
  • Top with 1 cup of cheese.
  • Repeat layers.
  • Cover the baking dish with aluminum foil.
  • Bake for 30 minutes - remove foil.
  • Bake for 10 minutes, until bubbly and cheese is starting to brown.
  • Top with cilantro and green onions before serving if desired.

Notes
