This week is all about quick and easy meals! From creamy Monterey chicken casserole to pot roast with jalapeno cheese grits - you'll find delicious possibilities!

📅 Food Holidays

March 1 is National Peanut Butter Lovers Day - and you'll find an amazing peanut butter pie in this meal plan... but you'll want to try these classic peanut butter cookies as well.

March 3 is Moscow Mule day and it's a great time to check out my version - this Clementine Kentucky Mule. Now, settle in and take a look at this week's menu.

Always look ahead at your menu and get as much done as once as you can. It saves time and money - because you don't have a lot of leftovers sitting around.

  • When you make the chicken breast for bourbon chicken make extra for the Monterey chicken casserole and chicken cacciatore.
  • Keep side dishes easy. Buy bagged salads, green beans that have been trimmed, whatever it takes to make it easier.
  • Small amounts of leftover vegetables can be added together and made into a vegetable soup or added to pasta sauce.
  • Leftover pot roast makes great sandwiches!

February 26
