  1. Stir together the mayonnaise, sweetener, salt, and pepper.
  2. Blend in the bacon grease and cider vinegar until smooth.

Cover the low-carb broccoli salad with plastic wrap or put in an airtight container. Store in the refrigerator up to 4 or 5 days.

This recipes does not freeze well.

📖 Variations

  • Add a little bit of Dijon mustard to the dressing.
  • Use sliced almonds or pine nuts in place of the sunflower seeds.
  • Try pumpkin seeds in place of sunflower seeds.
  • Add chopped, hard cooked egg.
  • Substitute sour cream for half the mayonnaise.
  • If you're not on low carb make it a traditional broccoli salad by substituting sugar for the sweetener.
  • Add cooked chicken breast to make it a main dish salad.

💭 Tips

Expert Tip: I like to add the crumbled bacon to each serving as it's served. That way if there's leftovers the bacon doesn't get limp from soaking up the dressing.

  • Any cup for cup sugar-free sweetener can be used. Always start with a little less and add sweetener to taste.
  • A concentrated sweetener like stevia or the pink packets will work but you'll want to use much, much less.
  • For best results cover and chill for at least an hour.
  • Make this recipe even faster by using pre-cooked bacon.
  • I like to use the bagged broccoli florets. It's quicker and easier than cleaning and cutting!
  • I also like to get diced red onion for this. It's a timesaver and I don't have to cry while cutting onions.
  • Grate cheese from a block rather than buying grated cheese in a package.

Equipment Needed

  • 4 quart mixing bowl

Ingredients

Low-carb dressing

  • ¾ cup mayonnaise
  • 5 tablespoons low-carb sweetener, I used monkfruit
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon bacon grease, optional
  • Salt and pepper to taste

Salad

  • 12 ounces fresh broccoli cut into bite sized pieces, about 6 cups
  • ¼ cup red onion, diced - reserve a few slice for garnish
  • ½ cup toasted sunflower seeds, I use the salted kind
  • 4 ounces cheddar cheese, shredded
  • ½ lb bacon, cooked and crumbled

Instructions

Low-carb dressing

  • Mix the mayonnaise, sweetener, salt, and pepper in a bowl.
  • Add the vinegar and bacon grease - stir until smooth.
  • Taste and adjust sweetness.

Salad

  • Mix all of the salad ingredients together except the bacon.
  • Pour the dressing over the top and stir to ensure all the salad ingredients are coated with dressing.
