Ingredients
- 3 tablespoons butter
- 2 cloves garlic, peeled and chopped
- 12 ounces baby spinach
- ¼ cup parmesan cheese, shredded
- 2 cups Pepper Jack cheese, shredded
- 8 ounces cream cheese
- ⅓ cup sour cream
- salt and pepper to taste

- Spray a 1.5 quart baking dish with nonstick spray. Set aside.
- Melt the butter in a heavy skillet over medium heat.
- Stir in the garlic and spinach. Cook and stir 2 to 3 minutes, until spinach is wilted.
- Remove from heat.
- Soften cream cheese in microwave.
- Stir in sour cream then add to the spinach mixture.
- Stir in the Parmesan and Pepper Jack cheese.
- Transfer mixture to the prepared baking dish.
- Bake at 350 degrees F for 20 minutes, or until bubbly and golden brown.
