Rotel Sausage Dip isn't fancy - it's three ingredients, ten minutes, and gone before halftime. Cream cheese, Rotel, and Jimmy Dean hot sausage (because mild sausage is basically lying to yourself). Scoop it up with chips, crackers, or pork rinds and watch it vanish faster than gossip at the church potluck.

🧾 Ingredients you'll need for this easy dip
Sausage, cheese, and a can of Rotel-this isn't rocket science, it's party food.

- Sausage - I use Jimmy Dean hot sausage, because bland sausage is a crime. Go mild if you must, but don't say I didn't warn you.
- Rotel - That magical can of diced tomatoes with green chilies. It's what gives the dip its kick (and its Southern street cred).
- Cream cheese - Full-fat, baby. This isn't the time for sad, skinny blocks of "lite" cheese.

Yes! Let the dip cool completely, then spoon it into an airtight container or freezer bag. It'll keep for up to 3 months in the freezer. When you're ready to serve, thaw it overnight in the fridge and reheat gently on the stovetop or in a slow cooker. If it looks a little thick or grainy, stir in a splash of cream or milk and it'll smooth right back out.
Yes, be sure to stir every 30 seconds to prevent burning.

Thanks to my Restless Chipoltle recipes.

Ive made this recipe as written, but I found it tastes so much better if you add green onion (just the green part finely chopped) to the mix after the sausage is cooked and drained. I add it when I add the rotel and cream cheese. Cook on medium heat stirring frquently until cream cheese is completely melted . With the green onion added I give it a 5☆
