Welcome to meal plan 29! This week we're enjoying a southwestern breakfast treat for dinner, easy main dishes, and cool salads that make the most of summer produce.
📅 Food Holidays
We celebrate a couple of fun food holidays this week. They're silly little holidays but it gives us an opportunity to make some memories and have some fun!
🫑 What's in Season?
A better question might be, "what isn't in season?"
Everything is ripening and coming into the Farmers' Markets now. It's fresh, in season, and at it's best. Make the most of these fresh flavors.
- Bell pepper
- Berries (raspberries, strawberries, blackberries, blueberries)
- Green beans & Wax beans
- Zucchini and yellow squash
🍹This week's cocktail
Give the Alabama Slammer a try this weekend. This beautiful, bright red cocktail is kind of like Hawaiian Punch for adults.
💭 Tips for success
- If there are deviled chicken leftovers cut them up and add them to a big, crunchy salad for lunch.
- Cucumbers in sour cream make a great sandwich filling. It may sound weird but try it if you have leftovers.
- Banana pudding yogurt parfaits can be made well ahead of time in jelly jars, covered with a screw on lid, and kept in the fridge for a grab and go breakfast or snack.
- Make extra round roast to use in the shepherd's pie.
- If you have enough leftover roast use some of it to top thick slices of white bread then cover with hot beef gravy from the store.
- When you make the green beans cook extra in another pan for the shepherd's pie.
This vintage recipe is still a winner in my book! Deviled Chicken has a crispy breadcrumb coating with just a little kick. The bone-in chicken breast stays moist and tender.
Creamy cucumber salad has always been on of my favorite dishes. I love the leftovers spooned onto white bread and made into a sandwich.
Peach Cobbler Dump Cake
This is a throw together dessert that just couldn't be easier! Peach cobbler with a 2 minute prep time!
I love a good caramel latte - and this one is simple to make.
Banana pudding yogurt parfait tastes like a dessert but it's a great way to start, or end, a day.
Marinated in beer and brown sugar! This round roast is perfect for Sunday dinner - and leftovers make great sandwiches! Save some for the shepherd's pie later in the week.
Creamy, cheesy goodness with a crispy topping! Broccoli casserole is a delicious addition to this meal.
King Ranch Chicken
King Ranch chicken is a quick and easy classic that's easy on the budget and big on flavor.
Southern Green Beans
Sweet and sour green beans with bacon and onions is so good I could eat it every day.
Buttery, crumbly lavender shortbread has a unique citrus flavor from the lavender.
Use the leftover round roast to make this easy shepherd's pie. Using roast beef instead of ground beef takes it to a new level!
Fried Green Tomatoes
Fried green tomatoes are one of my favorite sides. Make extra to put on the grilled pizza later in the week. I also like them on top of burgers and in sandwiches! If you don't want to take time to fry them, just slice some ripe tomatoes and sprinkle with salt and pepper.
Strawberries & Cream Angel Food Cake
This is such a quick and easy dessert! Strawberries & cream angel food cake starts with a purchased angel food cake to keep it simple.
Have you ever made grilled pizza? If not you're missing out! I'm sharing one of my favorites - topped with fried green tomatoes but you can make yours any way you want.
Pear salad is a southern classic with canned pears and mayo. I've updated it quite a bit with grilled pears, candied pecans, and bleu cheese.
Lemon Icebox Pie
This simple, no bake lemon pie takes about 5 minutes to put together. I like to make a few at a time and keep them in the freezer.
Chicken Fajita Pasta
One pot chicken fajita pasta is SO easy and almost no clean up! Tender and juicy chicken breast seasoned just right is stirred together with penne pasta in a deliciously creamy sauce.
Black Eyed Pea Salad
Cowboy Caviar, Texas Caviar... whatever. I love the tangy, earthy flavors of this black eyed pea salad.
Mexican Hot Chocolate Cupcakes
Spicy, warm chocolate flavor! Mexican hot chocolate cupcakes have a touch of cinnamon that makes them extra special.
