  1. Add the onions and boneless, skinless chicken breasts to the slow cooker.
  2. In a mixing bowl, combine the soups and seasonings. Spoon over the chicken and top with chicken broth.
  3. Shred the chicken and add the vegetables.
  4. Cut the biscuits into squares and lay them over the top.

Easy crockpot chicken recipes like this one always seem to go quickly in my house, but if you have leftovers, you can refrigerate them for up to three days. Just make sure to seal them in an airtight container, first.

To reheat the chicken and dumplings casserole, spoon it into a microwave-safe dish and heat it until warm.

Alternatively, freeze leftovers in freezer-proof bags for up to three months. Let thaw in the refrigerator before microwaving, or heat a large quantity on the stove.

📖 Variations

  • Substitute chicken thighs in place of the boneless skinless chicken breasts for a dark meat variation. (Just make sure they are boneless and skinless.)
  • If you have a favorite homemade dumpling recipe, feel free to use it in this recipe. Cook as directed in the instruction card below.
  • Instead of canned or frozen veggies, you can use fresh. However, add them in at the beginning of the cooking time so they can thoroughly soften.
  • You can easily turn this dish into a chicken and dumplings soup by doubling the amount of chicken stock.

Expert Tip: I know the aroma is tempting, but refrain from opening the slow cooker lid more than necessary while the biscuit dumplings are cooking. It will release valuable heat that can interfere with their proper cooking.

  • This easy chicken and dumplings recipe cooks best in a 6-quart slow cooker. Otherwise, as the biscuits rise, the pot will become very, very full.
  • Make sure to flatten the biscuit dough carefully before adding it to the crockpot. Dough pieces that are too thick won't cook through as well, resulting in a mushy exterior and raw interior.

Can I use buttermilk biscuits?

Sure, almost any can of biscuits from the grocery store's refrigerated section will work. You can even use crescent roll dough if it's all you can find. However, don't use the Hawaiian rolls or any sweetened variety.

Instead of the cream of chicken and cream of celery soups, can I use something else?

If you can't find either soup in the store, you can substitute for cream of mushroom. The dish will still taste great, but the flavor will change slightly.

I don't have the canned soup—can I just use heavy cream?

I don't recommend simply swapping out the soup for cream, as the flavor won't be as deep and the texture will change dramatically. Plus, occasionally, too much dairy in the crockpot can curdle. Though they contain dairy, the condensed soups are thickened and set to prevent separation.

Instead of non-stick spray, can I use a crockpot liner?

Yes, if you like to use crockpot liners, go ahead and feel free to use one in this recipe.

Equipment Needed

  • Slow Cooker

Ingredients

  • 2 pounds skinless boneless chicken breasts, or thighs
  • 2 cups onion, diced
  • 10.5 ounces cream of celery soup, don't dilute
  • 10.5 ounces cream of chicken soup, don't dilute
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon poultry seasoning, or herbes de Provence
  • ½ teaspoon rubbed sage
  • black pepper, to taste
  • 2 cups chicken stock
  • 2 cups peas and carrots, drained if canned, thawed if frozen
  • 1 pound refrigerated biscuits, 2 cans

Instructions

  • Spray the inside of the crock with no stick cooking spray.
  • Put the onion and chicken breasts in the crockpot.
  • In a small bowl combine the soups, parsley, poultry seasoning, sage, and pepper.
  • Spoon over chicken.
  • Add chicken stock then cover, and cook on low 8 hours.
  • 1 hour before serving shred chicken with 2 forks.
  • Roll biscuits thin and flat.
  • Cut in squares.
  • Stir the vegetables into the crockpot and lay the dough squares on top.
  • Cover and cook another hour or two until biscuits are done.
  • Stir the biscuit dumplings into the chicken mixture before serving.
