However, the best part is that it's so easy you probably could make it with your eyes closed! (Though, for dinner's sake, I don't recommend trying.) Who doesn't love an easy chicken recipe like this (or this brown sugar chicken)?!

  1. Place chicken in the crock pot.
  2. Mix the sauce ingredients together and pour over chicken.
  3. The chicken cooks on the low setting for six to eight hours.
  4. Shred the chicken and stir to coat in the sauce.

This slow cooker honey mustard chicken recipe is a great option for making a big batch in advance. It keeps really well and tastes delicious when reheated.

Let leftover chicken cool down, then scoop it into an airtight container. Store it in the refrigerator for up to five days, or in the freezer for up to three months.

When you're ready to enjoy your chicken again, simply reheat it in the microwave until hot. You can microwave it from thawed or frozen. Just be sure to stir it a few times so it heats up evenly.

  • Feel free to use boneless skinless chicken thighs instead of breasts if you prefer dark meat.
  • Forgot to grab ginger ale? You can use orange juice in its place. The chicken will taste a bit more citrusy-but in a delicious way, of course!
  • Some people like to add a dash of soy sauce or Worcestershire sauce to honey mustard chicken. However, do so sparingly because dijon mustard can be salty.
  • You can alter the flavor of the chicken by choosing your dijon mustard carefully. If prefer a spicier dish, choose a spicier dijon mustard.
  • Or, for more heat, stir in some red pepper flakes or sriracha sauce.
  • If you don't have non-stick cooking spray, grease your crock pot with a bit of olive oil or a little butter.

Expert Tip: Slow cooker meals are great if you won't be home to monitor your food because the pot will turn off automatically. On the other hand, if you are home, you can check the chicken at the six-hour mark with a meat thermometer for doneness. If the internal temperature is 165 F degrees, no need to keep cooking-toggle to the warm setting 'til dinner.

Chopped spring onions or green onions are a great combination with the tangy honey mustard. Depending on what else you're cooking, rosemary, thyme, and parsley would taste scrumptious, too.

Can I put this in the oven, instead?

I haven't tested it to know the exact cooking time and temperature for best results. I prefer this as a slow cooker recipe because the chicken comes out incredibly tender and moist. Plus, on hot days, I really don't want to deal with a sizzling oven or frying pan.

Y'all, when we had this I was expecting leftovers - and looking forward to lunch the next day.

There. Were. No. Leftovers. In fact, I almost didn't have to wash the pan. It was licked clean as a whistle.

Just an FYI - I've used all kinds of dijon, yellow mustard, and all the rest in this recipe and my favorite is the old fashioned Gulden's Brown Mustard.

Ingredients

  • 2 pounds chicken breast, boneless skinless
  • ¼ cup packed light brown sugar
  • ½ cup honey
  • ¼ cup Dijon mustard
  • ¼ cup gingerale

Instructions
