January 1 - Friday
Black Eyed Pea Soup
Simple and comforting, this black eyed pea soup is full of smoky, spicy flavor.
Serve with this easy, southern buttermilk cornbread for an easy, budget friendly, and LUCKY way to start 2021.
If you want a little something sweet to end on this homemade vanilla pudding is the perfect alternative to all those rich holiday desserts.
January 2 - Saturday
Fried Potatoes & Sausage
Such a simple, cozy meal! Slice up smoked sausage and add it during the last 5 minutes of cooking your fried potatoes for an easy skillet meal. Just add a salad to the side. Make extra potatoes for Sunday. Get extra sausage for Thursday.
Add a batch of these piping hot cheese biscuits to the table if you have time. They're light, flaky, and delicious! No time to make them from scratch? Sprinkle grated cheese on top of refrigerated biscuit dough!
Add a little something sweet with these cinnamon spiced apple rings. Make extra and using them with the cheese biscuits and some deli ham for sliders later in the week.
January 3 - Sunday
Mississippi Pot Roast
Perfect for Sunday dinner! Make extra Mississippi pot roast because we'll be using the leftovers later. Add the leftover fried potatoes as a satisfying side. Green beans are perfect with this.
Make a batch of these vienna rolls but make some of them small (dinner rolls size) and some sandwich sized for later in the week. You might want to triple the recipe - these freeze really well!
Chocolate Upside Down Cake
This is an easy, Depression era recipe! The topping bakes right on this chocolate upside down cake!
January 4 - Monday
Happy National Spaghetti Day! This chicken spaghetti is quick & easy. If you're pushed for time grab a rotisserie chicken from the deli to use in this. I serve broccoli with this.
This quick baguette is done, literally start to finish, in 30 minutes. While it's baking make some garlic butter! Just add garlic powder and salt to taste to softened butter.
These are the best brownies ever! Chewy, gooey, and so chocolatey! Save some for dessert later in the week.
January 5 - Tuesday
Grab that leftover beef and some of those Vienna rolls (or store bought) and make some easy Italian Beef sandwiches.
Tangy Italian pasta salad is make ahead easy and goes perfectly with the steak sandwiches.
If there's leftovers you can add leftover chicken and enjoy it for lunch!
I like to make the cranberry cookie dough, spoon it on cookie sheets, then freeze it. When frozen it goes into a Ziploc. When I'm ready I take out as many as I need, bake as usual, and have fresh cookies anytime!
January 6 - Wednesday
Fiesta chicken is so easy and your family will love it! Try to save some to make nachos for lunch tomorrow.
Serve over rice and add a salad if you like.
Peach Dump Cake
Throw together this super easy peach dump cake for dessert. Use peach pie filling or cherry or apple - whatever you like! Ice cream on top is nice.
January 7 - Thursday
Smoked sausage, pasta, and Alfredo sauce is cozy and comforting in this easy smoked sausage Alfredo skillet meal. Serve with salad and garlic bread.
For dessert take those leftover brownies and warm them up slightly. Top with chocolate ice cream and this easy Jack Daniels caramel sauce. Sprinkle with some coarse salt crystals if desired.

- small shell macaroni
- Cheddar cheese
- half & half cream
- heavy cream
- 24 oz cream cheese
- cinnamon sticks
- whole cloves
- sesame seeds
- active dry yeast
- dry Ranch dressing mix
- dry onion soup mix
- smoked paprika
- yellow cake mix
- all purpose flour
- self rising flour
- cake flour (this is for the cake - you can just use all purpose if you want)
- brown sugar
- baking soda
- baking powder
- bittersweet chocolate
- Eagle Brand sweetened condensed milk
- corn syrup
- 2 cans peach pie filling
- light vegetable oil
- Cinnamon candies (Red Hots or Imperials)
- Jack Daniels or other bourbon for caramel sauce
