  1. In a large skillet, cook beef and chopped onion.
  2. Layer the meat, potatoes, and cheddar cheese in a greased baking dish.
  3. Pour the soup mixture on top and sprinkle with more shredded cheese.
  4. Bake hamburger casserole in preheated oven for one hour.

Let your casserole come closer to room temperature before storing or freezing it.

Then, keep the extra hamburger potato casserole in an airtight container for three to four days—refrigerated of course. Pop it in the microwave until it's warmed and you've got lunch (or dinner) again!

You can also freeze leftovers for up to three months. Store the casserole in freezer-safe containers and thaw in the fridge before reheating.

📖 Variations

  • This is a great meal to make in advance! Prep the dish as directed, but before baking, wrap the assembled casserole tightly in plastic or foil. Refrigerate or freeze—let it thaw in the fridge before baking.
  • Swap the meat. Any ground protein will work well. Turkey or pork are some good options. Or, use a meat mixture, combining hamburger meat with another type. No one will know but you!
  • No cheddar? No problem. Try it with American or Colby-jack. I'd avoid milder flavors, though, like mozzarella cheese.
  • What kind of potatoes? If you can't find the Yukon Golds recommended in this delicious hamburger potato casserole recipe, use Carola or red-skinned potatoes.
  • Experiment with fun mix-ins. Depending on what you've got a taste for, try stirring in some cauliflower, bell peppers, or mushrooms.
  • Don't forget the garnish! A dollop of sour cream and some extra seasonings, like parsley, finish off your dish as a chef would!

Expert Tip: Yukon Gold potatoes don't have to be peeled, so they're the perfect time saver in this recipe. However, if you swap them for something else, like Russet potatoes, you'll want to remove the skin.

Ingredients

  • 1 ½ pounds ground beef
  • 1 pound Yukon Gold potatoes, thinly sliced - about 4 cups
  • 21.5 ounces cream of mushroom soup, 2 10.5-ounce cans
  • 2 cups onion, chopped - about half a pound
  • 1 ½ cups milk
  • salt to taste
  • freshly ground pepper, to taste
  • 1 ½ cups Cheddar cheese, shredded from a block; divided use

Instructions

  • Preheat oven to 375F.
  • Spray a casserole dish with no-stick cooking spray.
  • Set aside ½ cup of the cheese.
  • In a heavy skillet over medium heat, brown the ground beef and onion.
  • Drain fat.
  • In a medium mixing bowl, combine cream of mushroom soup, milk, salt and pepper.
  • Layer the ½ of the potatoes, 1 cup of the cheese, and the cooked meat mixture. in a 13x9-inch baking dish.
  • Top with remaining potatoes.
  • Pour the soup mixture over the top.
  • Top with remaining Cheddar cheese.
  • Cover with aluminum foil.
  • Bake in the preheated oven for 1 hour, or until potatoes are tender.
  • Continue baking for 5 minutes or until cheese is melted.

Storage:
