This Peach Icebox Pie is straight outta MeMaw’s 1972 church potluck playbook—the one with the handwritten notes in the margins about various churchmembers and a smear of Jell-O salad on every third page.

I’ve been eating this pie since I was old enough to sneak Cool Whip straight from the tub without getting caught (spoiler: I definitely got caught). It’s cold, creamy, and just the right amount of the “I didn’t actually cook anything” energy we all need in our lives. No baking, no drama, and no shame in using a store-bought crust (or use this crumb crust recipe) because guess what? Life is hard, and this pie is easy. Serve it straight from the fridge like a retro kitchen goddess and watch your people lose their minds.

Ingredients

  • 1 store-bought graham cracker crust or shortbread crust
  • 8 ounces cream cheese, softened
  • 14 ounces sweetened condensed milk
  • 12 ounces Cool Whip, thawed
  • 21 ounces peach pie filling
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon, optional

Instructions

  • Beat the cream cheese in a mixing bowl until it’s smooth and lump-free.

🍑 Want fresh peaches? Swap the pie filling for 2 cups of chopped fresh peaches + ¼ cup sugar and let them sit for 15 minutes.
🥄 No graham cracker crust? Crushed vanilla wafers or shortbread cookies work like a charm.
