🔪 Instructions

  1. Hard boil the eggs and peel. Cut the peeled eggs in half and carefully remove the yolks.
  2. Blend together the egg yolks, mayo, and mustard until creamy.
  3. Stir in the chipotle, crispy bacon, and a little bacon fat.
  4. Fill the egg whites with about one tablespoon of the yolk mixture.

How to Smoke Deviled Eggs

  1. Fill the smoker with wood chips and light it per the manufacturer's directions.
  2. Cover the eggs with a lid.
  3. Smoke for 5 to 10 minutes.
  4. Turn off the smoker but let the eggs stand under the dome for another 5 minutes.

Store the eggs tightly sealed container, or covered with plastic wrap, in the fridge for up to three days.

Deviled eggs do not freeze well!

📖 Variations

  • If you love a more spicy flavor to your eggs, add more chipotle peppers.
  • For a milder flavor reduce the number of peppers that you use.
  • For a zesty tang, add a dash of apple cider vinegar or white vinegar.
  • Some people prefer Miracle Whip over mayonnaise - you can substitute it in equal amounts.
  • Green chiles can be added to the yolk mixture for even more Tex Mex flavor.

💭 Tips

Expert Tip: For easy to peel eggs, you can add ¼ teaspoon of baking soda to your water when hard boiling eggs.

  • I like to use older eggs so that they peel easily. Learn more about how to hard boil eggs here.
  • A trick to fill the eggs without much mess is to use a piping bag or a storage bag with the corner cut off.
  • Garnish with fresh chives or green onions for color.
  • The first time you do this you might want to do it under the fan on the stove or outside - until you learn to control the smoke. The first time I smoked deviled eggs with the smoke gun the inside got a little hazy!

How long do deviled eggs last in the fridge

They'll be fine for at least 4 days when in an airtight container or covered with plastic wrap.

How long does it take to smoke an egg?

It takes about 5 to 10 minutes.

What temperature do you smoke eggs at?

The temperature should be between 250°F and 275°F if you use an outdoor smoker. These are cold smoked so temperature isn't an issue.

What wood chips are best for smoking eggs?

I recommend hickory or mesquite wood chips.

What do smoked deviled eggs taste like?

I grew up with these - as I'm sure most of y'all did... but once I tried cold smoked deviled eggs there was no turning back!
It's such and easy process and the smoke flavor isn't overwhelming like with an outdoor smoker.

Ingredients

  • 12 eggs, hard cooked and peeled
  • ⅓ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon chipotle chilies in adobo, mashed
  • ½ pound bacon , cooked crisp and crumbled
  • Smoked paprika
  • Salt

Instructions

  • Cut the cooked, peeled eggs in half.
  • Gently remove yolks with a spoon.
  • Add the yolks to a large bowl and set aside.
  • Arrange the egg whites on a serving dish with the cut side up.
  • Mash the yolks with the mayonnaise and the mustard until they are smooth and creamy..
  • Mix in the chipotle, the bacon, and 1 tablespoon of the bacon fat.
  • Taste and add more chipotle, salt, or mustard if needed. Be careful, the chipotle will get spicier as the eggs stand.
  • Fill the hollows in the egg whites with the yolk mixture.
  • Sprinkle with smoked paprika.
  • Garnish with a piece of bacon and some chives
  • Chill until serving.

To Smoke

  • Place the finished deviled eggs on a plate under a dome or lid.
  • Place the tube under the dome.
  • Fill the receptacle for the wood chips and light according to manufacturers instructions. Turn on.
  • Let the food smoke for 5 to 10 minutes.
  • Turn the smoker off but leave the dome over the eggs to let the smoke settle in for at least 5 minutes or more.
  • Remove dome and serve or refrigerate.
