  1. Slice the smoked sausage and dice the potatoes & onions.
  2. Combine cream of chicken, sour cream, onion soup mix, and cajun seasoning in a bowl.
  3. Mix together cheddar cheese, smoked sausage, onions, and potatoes in your crockpot.
  4. Spoon cream soup mixture over the top of the potato sausage mixture and cook on low heat until done. Gently stir before serving.

This recipe doesn't freeze well. The potatoes can take on a weird texture.

📖 Variations

  • If you are not a fan of pork sausage you can use chicken sausage or Italian sausage instead. I generally use all beef smoked sausage in this hearty casserole.
  • Baby potatoes can be used instead of russets. If using baby potatoes just slice them in quarters.
  • Bell peppers would be a great addition to this easy recipe and add a fresh flavor.
  • Use pepper jack or other jack cheeses for a creamy flavor to this potato casserole.

💭 Tips

Expert Tip: Use a slow cooker liner or spray the slow cooker well with cooking spray for easy cleanup.

  • Garlic powder stirred into the sour cream mixture can add some additional flavor to this slow cooker recipe.
  • Cream of celery soup can be used instead of chicken soup.
  • To make sure you get tender potatoes from this recipe, try to get all the diced potatoes as close to the same size as possible.
  • I use thin skinned, Yukon Gold potatoes when I know I don't want to take the time to peel!
  • Red potatoes work, too.
  • Get onions that are all ready diced to save even more time.

Can raw sausages go in the slow cooker?

Yes, you can cook raw sausages in a slow cooker. The smoked sausage in this recipe is already cooked, however.

Can you overcook sausage in the crockpot?

Yes, however, it takes 10 hours or longer to overcook the sausages.

Can you put raw potatoes in the slow cooker?

Yes, you can put raw potatoes in the slow cooker, they will cook slowly and turn out perfectly tender.

Equipment Needed

  • Slow Cooker

Ingredients

  • 2 pounds potatoes, peeled and diced
  • 14 ounces smoked sausage, sliced
  • 1 ½ cups onion, diced
  • 3 cups cheddar cheese, shredded (or a mixture of cheddar and pepper jack)
  • 10.5 ounces cream of chicken soup
  • ½ cup sour cream
  • 1 ounce onion soup mix
  • 2 teaspoons Cajun seasoning salt, Tony Chachere's
  • ¼ cup water
  • salt and pepper to taste

Instructions

  • Spray the inside of your slow cooker crock with no-stick cooking spray.
  • Dice potatoes and onions and add to the slow cooker.
  • Slice the smoked sausage and add on top of the vegetables.
  • Sprinkle with 2 cups cheese.
  • In a separate bowl, combine cream of chicken, sour cream, onion soup mix, and cajun seasoning.
  • Whisk until smooth.
  • Pour over potato mixture and stir to combine.
  • Pour the water into the slow cooker.
  • Cook on low for 7 ½ hours. Add the remaining cheese, replace the cover, and cook 30 minutes.
