- Slice the smoked sausage and dice the potatoes & onions.
- Combine cream of chicken, sour cream, onion soup mix, and cajun seasoning in a bowl.
- Mix together cheddar cheese, smoked sausage, onions, and potatoes in your crockpot.
- Spoon cream soup mixture over the top of the potato sausage mixture and cook on low heat until done. Gently stir before serving.

Ingredients
- 2 pounds potatoes, peeled and diced
- 14 ounces smoked sausage, sliced
- 1 ½ cups onion, diced
- 3 cups cheddar cheese, shredded (or a mixture of cheddar and pepper jack)
- 10.5 ounces cream of chicken soup
- ½ cup sour cream
- 1 ounce onion soup mix
- 2 teaspoons Cajun seasoning salt, Tony Chachere's
- ¼ cup water
- salt and pepper to taste

Instructions
- Spray the inside of your slow cooker crock with no-stick cooking spray.
- Dice potatoes and onions and add to the slow cooker.
- Slice the smoked sausage and add on top of the vegetables.
- Sprinkle with 2 cups cheese.
- In a separate bowl, combine cream of chicken, sour cream, onion soup mix, and cajun seasoning.
- Whisk until smooth.
- Pour over potato mixture and stir to combine.
- Pour the water into the slow cooker.
- Cook on low for 7 ½ hours. Add the remaining cheese, replace the cover, and cook 30 minutes.
