📖 Variations

  • If you are not a fan of pork sausage you can use chicken sausage, turkey sausage, or Italian sausage instead. I generally use all beef smoked sausage, Polish sausage or kielbasa in this hearty casserole.
  • Baby potatoes can be used instead of russets. If using baby gold potatoes just slice them in quarters.
  • Bell peppers would be a great addition to this easy recipe and add a fresh flavor.
  • Use pepper jack or other jack cheeses for a creamy flavor to this potato casserole.
  • Add a pinch of red pepper flakes if you like it a little spicy.
  • You can also use frozen hash browns to speed things up. If you do I'd cut the cooking time to about 4 hours on low.
  • Add a handful of fresh herbs. Oregano, rosemary, sage, and thyme are all great possibilities.

  1. Slice the smoked sausage and dice the potatoes and onions.
  2. Combine cream of chicken, sour cream, onion soup mix, and cajun seasoning in a bowl.
  3. Mix together cheddar cheese, smoked sausage slices, onions, and potatoes in your crock pot.
  4. Spoon cream soup mixture over the top of the cheesy potato sausage mixture and cook on low heat until done. Gently stir before serving.

Keep leftover casserole covered in an airtight container and refrigerated for up to 3 days.

This recipe doesn't freeze well. The potatoes can take on a weird texture.

  • Garlic powder stirred into the sour cream mixture can add some additional flavor to this slow cooker recipe.
  • Cream of celery soup can be used instead of chicken soup.

  • I use thin-skinned, Yukon Gold potatoes when I know I don't want to take the time to peel!

Ingredients

  • 2 pounds potatoes, peeled and diced
  • 14 ounces smoked sausage, sliced
  • 1 ½ cups onion, diced
  • 3 cups cheddar cheese, shredded (or a mixture of cheddar and pepper jack)
  • 10.5 ounces cream of chicken soup
  • ½ cup sour cream
  • 1 ounce onion soup mix
  • 2 teaspoons Cajun seasoning salt, Tony Chachere's
  • ¼ cup water
  • salt and pepper to taste

Instructions

  • Spray the inside of your slow cooker crock with no-stick cooking spray.
  • Dice potatoes and onions and add to the slow cooker.
  • Slice the smoked sausage and add on top of the vegetables.
  • Sprinkle with 2 cups cheese.
  • In a separate bowl, combine cream of chicken, sour cream, onion soup mix, and cajun seasoning.
  • Whisk until smooth.
  • Pour over potato mixture and stir to combine.
  • Pour the water into the slow cooker.
  • Cook on low for 7 ½ hours. Add the remaining cheese, replace the cover, and cook 30 minutes.

    I tried this recipe and followed it. After 8 hours on low the potatoes weren't done. We ate it anyway. It was good. If I make it again I will cook it longer .
