These tender little beefy nuggets are seared to sassy perfection in a hot cast iron, then drenched in a rich, garlicky butter sauce that'll have you licking the spoon and considering seconds before the first bite's even gone down. No reservations, no dress code, and no waiter with too much cologne—just you, your skillet, and a dinner that tastes like you paid way too much for it... but didn’t.

If you can’t find top sirloin steak in your grocery store, no worries! Beef tenderloin, tri-tip steak, New York strip steak, and rib-eye steak work just as well in this delicious recipe.

🔪 Instructions

  1. Add olive oil to a large skillet on the stovetop over high heat.
  2. Season the steak tips with salt and black pepper. Then, add them to the hot skillet in a single layer.
  3. Brown the beef tips for 2-3 minutes, then stir to brown all sides of the meat. Remove from skillet.
  4. Melt the butter on medium-low heat and saute the minced garlic for 30 seconds. Toss the cooked meat in the garlic butter sauce.

Ingredients

  • 1 ½ tablespoons olive oil
  • 2 pounds sirloin steak cut into bite-size pieces, tri-tip, tenderloin, strip steak or rib eye all work
  • 1 teaspoon salt or to taste
  • 1 teaspoon pepper or to taste
  • ¼ cup butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped

Instructions

  • Pat the steak pieces dry with a paper towel. Set aside.
  • Add the olive oil to a large skillet and heat it over high heat.
  • Season the meat with salt and pepper, tossing to get all sides.
  • When oil is very hot add the steak pieces in a single layer - do not crowd!
  • Cook for 3 minutes before stirring the steak pieces.
  • Stir to flip the steak pieces until all sides are golden brown and the inside registers 150F on an instant-read thermometer.
  • Remove the first batch to a plate and repeat the process until all the steak is cooked. Each batch will take about 5 minutes.
  • Transfer all the steak bites to a plate.
  • In the same skillet add the butter.
  • Turn the heat down to medium-low and melt the butter.
  • Add the garlic, stirring for 30 seconds.
  • Add the meat back to the skillet and stir to coat the pieces in the garlic butter.
  • Garnish with chopped parsley and serve hot.

Notes

Storage:
Refrigerate leftover garlic butter steak tips in an airtight container for up to three days.
You can also freeze cooked steak tips in an airtight container or freezer bag for up to three months.
Tips:
    • Pat the beef tips dry with paper towels before seasoning and searing the meat. Doing so will help the meat brown, improve the texture, and prevent the oil from splattering.
    • Let the beef tips sit at room temperature for 20-30 minutes before cooking so the meat cooks evenly—all the steak pros do it this way!
    • You need to cook your steak tips in batches so there’s plenty of room in the skillet to brown all sides of the meat. Each batch takes about 4-5 minutes to cook.
    • It only takes about 30 seconds to cook the garlic, so remove your skillet from the heat as soon as the garlic becomes fragrant. Burnt garlic will taste bitter and ruin the flavor of the garlic butter sauce.

  • You can swap the olive oil for vegetable oil, canola oil, or avocado oil.
  • Coat these easy stovetop beef tips with cajun seasoning or Popeye’s seasoning salt for a spicy Southern kick.
  • Add a glug of Worcestershire sauce or soy sauce to the butter for an even richer umami flavor!
  • Although fresh garlic cloves are best, you can use store-bought minced garlic in a pinch.

What’s the best cut of meat for garlic butter steak bites?

The best steak tips are made with a tender cut of beef. Use top sirloin steak, beef tenderloin (filet mignon), tri-tip steak, New York strip steak, or rib-eye steak.

Those cuts are lean and have just enough fat. I don’t recommend using rump roast or beef stew meat since those cuts are tougher, fattier, and need a slow cooking process to get the right texture.

How should I cut sirloin tip steak?

Cut your steak into 1-1 ½ inch cubes for the best results. Use a sharp knife and a sturdy cutting board.

Why didn’t my steak tips brown?

Your skillet likely wasn’t hot enough. You need high temperatures to properly brown meat. Next time, let your cast iron skillet warm up to medium-high heat before adding the steak to guarantee a caramelized, crispy crust.
