  • Cream of mushroom soup
  • Cream of chicken
  • Evaporated milk
  • Chicken broth

  • Extra-sharp Cheddar cheese

🔪 Instructions

All of the ingredients in the slow cooker.
  1. Add everything to the slow cooker except the shredded cheese.
  2. Cook on low for 4 hours.
  3. Stir in reserved cheese until melted; save some grated cheese to garnish each bowl of soup.
  4. Serve your creamy golden broccoli soup and enjoy!

🥫 Storage

Store covered tightly in the fridge for up to five days. It tends to thicken up so you'll want to thin it with some chicken stock or milk when you warm it up.

Since this is made with cream of chicken soup it does freeze well for up to three months.

  • Instead of regular Cheddar cheese, try pepper jack or Mexican blend cheese!
  • Add some shredded carrots in for more flavor.
  • If you enjoy a spicy kick, add some crushed red pepper flakes for spice.
  • Out of chicken stock? You can use chicken bouillon cubes and water instead.
  • Use cream of broccoli soup instead of cream of chicken.
  • Cut the fat by using low-fat milk and fat free cream of chicken soup.
  • I've left the carrots out of my version of broccoli Cheddar soup but you could add in ½ cup shredded carrots if you like.
  • Use the Velveeta Queso cheese for a little extra burst of flavor.

  • This is thick and creamy. If you prefer it thinner then add in extra chicken stock.
  • If you prefer a creamy soup, use an immersion blender to get the soup smooth.

Yes. Because it's made with commercial condensed soup it doesn't separate in the freezer.

Yes. You can use any kind of cheddar cheese if you don't have the extra-sharp variety on hand.

How long does broccoli last?

Raw or cooked broccoli - 3 to 5 days in the fridge. Cooked broccoli with keep 3 months or more in the freezer.

  • Slow Cooker

Ingredients

  • 1 cup onions, chopped
  • 10.5 ounces cream of chicken soup, condensed - don't dilute
  • 10.5 ounces cream of mushroom, condensed - don't dilute. May use cream of celery
  • 12 ounces evaporated milk
  • 32 ounces chicken stock, or 4 cups of chicken broth
  • 16 ounces broccoli, cut into small florets
  • 8 oz Velveeta, cubed
  • 2 cups extra-sharp cheddar cheese, shredded

Instructions

Slow Cooker

  • Add everything to the slow cooker except the shredded cheese.
  • Cook on low for 4 hours. This soup will hold well on warm for several hours.
  • Stir in cheese until melted; save some to garnish each bowl of soup.
  • Serve.

Stovetop

  • Cook broccoli until tender. Drain.
  • Saute onions in a little butter in the bottom of a large soup pot until transparent.
  • Add the drained broccoli and remaining ingredients, except the shredded cheese, to the pot with the onions and heat until the Velveeta melts and the soup is well blended and creamy.
  • Stir in the shredded cheese.
  • Serve hot.

      This is also good with cauliflower or a mix of broccoli and cauliflower. Yummy! Thanks for recipe.

      I'm a big, big fan of broccoli soup. My daughter carried that love into her marriage and now my granddaughter and her daughter do it. If I have never done anything, at least I have passed this on. Lol.
