📖 Variations

  • This recipe puts the pecans on the top because I think it's prettier. You can also put the pecans in first, then the batter, then the boiling water mixture.
  • If you don’t have unsalted butter, you can use salted butter instead and omit the other salt in this recipe.
  • Whole milk, 2% reduced-fat milk, or even non-dairy milk will work just fine for the cobbler topping.
  • Use light brown sugar or dark brown sugar in the buttery cobbler crust. Whichever you have on hand will do the trick!
  • If you want the pecan filling to have a more robust taste, try dark corn syrup or maple syrup instead of light corn syrup.
  • Swap the vanilla with some good bourbon to make a boozy treat.
  • Sprinkle about a half cup of toffee bits, walnuts, or shredded coconut over the batter and pecans for an extra sweet touch!

  1. Whisk the milk, melted butter, and vanilla extract into the dry ingredients in a large bowl.
  2. Spoon the cobbler batter into a casserole dish and add the pecans.
  3. Mix brown sugar, melted butter, corn syrup, and boiling water in a medium bowl until smooth.

The cobbler tends to soak up the sauce during storage so it's really at its best freshly made.

With a dessert this good, you'll likely not have any leftovers. If you do, cover the casserole dish with plastic wrap and store it at room temperature for up to two days.

Any longer than that, you'll want to transfer the pecan pie cobbler to an airtight container. It'll keep for about three additional days in the fridge.

Cobblers are best warm! So to reheat, cover the pecan cobbler with a damp paper towel and microwave it in 30-second bursts until heated through.

Expert Tip: Whatever you do, don’t stir the filling! The layers of ingredients need to stay separate in order to create a caramel sauce on the bottom and a soft, fluffy cake on top.

  • If you want extra gooey filling, microwave the cobbler for less time. (Besides, if it's too gooey, you can just pop it back in for a bit longer!)
  • If you overbake pecan pie cobbler the cakey layer will be firm and spongy. Err on the side of underbaking - it will continue to bake as it sits.

Yep! It's almost magical. Traditional hot water cobblers contain fresh fruit, but other sweet fillings like this buttery pecan pie or Mexican hot chocolate cobbler are just as delicious!

Can I freeze pecan pie cobbler?

You can, but I don’t recommend it. Just keep in mind that thawing frozen pecan pie cobbler will ruin the firm crust and soft cake texture underneath. Cobbler recipes are best eaten fresh, at room temperature, or chilled.

Can I bake pecan pie cobbler in the oven?

Sure thing. Grease your baking dish with cooking spray to prevent the cobbler from sticking to the bottom of the dish. Set your oven temperature to 350 degrees F and bake the pecan pie cobbler uncovered for 30-35 minutes until golden brown. Let cool.

Do I need a pie crust for pecan pie cobbler?

Some pecan pie cobbler recipes call for a top crust, bottom crust, or both. However, my original recipe creates its own crust while it "bakes" in the microwave. That’s what makes this easy pecan cobbler a great dessert—no pie dough, no worries!

As you might have guessed we are all about pecan pie around here. From the classic to the buttermilk pecan pie, we love 'em all.

I developed this pecan pie cobbler years ago when I was the extra busy mama of littles.

I cannot stress enough that you cannot leave this in the microwave even a minute too long! If in doubt remove it. Mine is generally overcooked at 10 minutes in a 1200 watt microwave.

Ingredients

Topping

  • ⅓ cup butter, melted
  • 1 ¼ cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 1 teaspoon vanilla extract

Filling

  • 2 cups chopped pecans
  • 1 cup packed brown sugar
  • ¼ cup butter, melted
  • 1 cup boiling water
  • ¼ cup corn syrup

Instructions

Batter

  • Stir together the dry ingredients.
  • Add the milk, butter, and vanilla and stir until smooth.
  • Spread the batter in a 2 quart casserole dish.
  • Sprinkle the pecans over the top.

Sauce

  • Mix sugar, butter, corn syrup, and boiling water in a bowl.
  • Carefully pour over the batter and pecans in the casserole dish. Don't stir!
  • Microwave for 8 to 10 minutes.
  • The sauce will be on the bottom but the cake will be on the top. If you like it very gooey microwave it for less time.
  • Serve warm topped with vanilla ice cream.
