📖 Variations

  • You can use chicken thighs instead of skinless chicken breasts. Thighs have a richer flavor and are juicier than breasts.
  • Turkey breast or ground turkey is also a great option in this recipe.
  • A can of diced tomatoes will do in a pinch. You’ll lose the green chili peppers and cilantro from the Rotel tomatoes, though.
  • Adding green chiles is optional, but I highly recommend that you do! They add a touch of heat and a tangy, sweet flavor to Mexican food.
  • Bulk up this slow cooker burrito bowl recipe by adding (or substituting) pinto beans or white beans.
  • You can make your own taco seasoning with chili powder, cumin, paprika, garlic powder, onion powder, oregano, and cayenne pepper.
  • If you like it spicy, amp up the heat with hot sauce, jalapenos, or chipotle peppers in adobo sauce!
  • Try out some new toppings: experiment with avocado, cherry tomatoes, grilled corn, and everything else you enjoy in a burrito bowl!

Burrito bowls are hearty, especially if you load 'em with toppings. Refrigerate leftover slow cooker chicken for up to one week in an airtight container.

This recipe makes great leftovers, especially if you like to meal prep for a few days at a time. Zap the leftovers in the microwave until they're warm, and you're good to go.

You can also freeze leftovers in a heavy-duty container for up to three months. Thaw the frozen burrito filling in the fridge before reheating it.

Expert Tip: Crockpot chicken shreds super easily. Using two forks, pull the chicken breasts apart. I recommend doing this on a cutting board so you don't scratch your slow cooker or burn your arms on the edge.

  • Choose low-sodium chicken broth if you’re concerned about sodium content.
  • The chicken is fully cooked when the internal temperature reads 165 degrees F on an instant thermometer.
  • Complete your delicious dinner by serving your chicken burrito bowl over rice. Cilantro lime rice is my favorite, but long-grain white or brown rice or even instant rice works just as well.
  • Don't forget your favorite burrito toppings! Sour cream, freshly shredded cheddar cheese, sliced green onions, chopped cilantro, spicy salsa, mole sauce, candied jalapenos, and fresh lime juice are delicious.

Can I use cooked chicken for burrito bowls?

Leftover rotisserie chicken is perfect in this recipe! Since it’s already cooked, simply combine together all of the ingredients (besides the rice) on your stove over medium and let it simmer for 20-30 minutes.

Can I make chicken burrito bowls in an Instant Pot?

Yep! This is a great recipe to make in an Instant Pot. Just add the chicken mixture, seal it, and cook on high pressure for 15 minutes!

How long do I cook this crockpot chicken burrito bowl recipe on high?

It will take 3-4 hours to cook this easy meal on the high setting.

Can I add uncooked rice to the bottom of the slow cooker?

I don’t recommend it. Each different type of rice requires different amounts of liquid and cooking time, so it’s tricky to adjust slow cooker meals accordingly. You could end up with mushy rice—or undercooked rice. Trust me, it’s so much easier to cook it separately!

Are chicken burrito bowls low-carb?

Sorry y’all, but this meal isn’t quite keto-friendly. Black beans and rice are both high in carbs. However, many experts say that burrito bowls are nutritionally balanced and can contribute to a healthy, protein-packed diet.
If carbs are your concern, serve chicken burrito bowls over cauliflower rice instead of white/brown rice to reduce the carb content.

Ingredients

  • 1 ½ pounds boneless skinless chicken breasts, or chicken thighs
  • 14.5 ounces Rotel tomatoes
  • 1 cup chicken broth, plus more as needed
  • 4 ounces chiles, optional
  • 1 ounce taco seasoning
  • 2 teaspoons salt
  • 1 teaspoon ground cumin
  • 15 ounces black beans, drained and rinsed
  • ⅓ cup cilantro, chopped - optional
  • 3 cups cooked rice
  • green onions, garnish
  • 2 cups cheddar cheese, grated from a block - garnish

Instructions

  • Add everything except the rice and garnishes to the slow cooker.
  • Set on low for 6 hours.
  • Shred chicken.
  • Serve over cooked rice topped with the cheese, green onions, and your favorite toppings.
