  • A great way to jazz up your cheeseburger pot pie filling is with some herbs and spices such as garlic powder or fresh minced garlic, dried or fresh thyme, or chili powder for a touch of heat.
  • I buy puff pastry sheets from the grocery store, but you're welcome to try your hand at homemade puff pastry if you're feeling adventurous!
  • Feel free to use other types of melty cheese, like Colby jack, Monterey jack, pepper jack, or mozzarella cheese.
  • For a lower sodium option, ditch the beef bouillon and use ¼ cup of beef broth instead.
  • Sprinkle the top of the pastry with sesame seeds to make it taste like a cheeseburger bun!

Cheeseburger pot pie is best enjoyed fresh out of the oven the same day it's made.

Once the leftover cheeseburger pot pie has cooled to room temperature, refrigerate it in an airtight container for up to four days.

Pot pies don't freeze great, but you can store leftovers in the freezer for up to three months. However, the pie crust gets a little soggy after thawing.

Reheat leftovers in an oven or air fryer at 350 degrees F for 10-15 minutes to make the crust nice and crispy again.

I don't recommend reheating leftovers in the microwave since it will make the flaky crust a little gummy.

Expert tip:

Remember, fully brown the ground beef and onions over medium heat before adding the pastry on top. Raw meat won't cook thoroughly in 20 minutes of baking time.

💭 Things to know

  • Use a wooden spoon to break up the beef while it cooks. Metal utensils will scrape the bottom of your skillet, and cheap plastic utensils can melt!
  • You don't need to cook the filling in olive oil since the beef provides grease. That being said, I recommend draining the excess grease from the skillet so your filling isn't too oily.
  • Always roll out puff pastry sheets on a clean, lightly floured surface so it doesn't stick or tear. Rolling it out on a piece of parchment paper will make it easier to transfer to the top of your skillet.
  • Make sure your puff pastry is thawed and stored in the fridge until you're ready to use it-don't let it sit out at room temperature while you make the beef filling. Dough that's too warm will leak out the butter in the oven and you won't get flaky pastry.
  • Brush the top of the puff pastry with an egg wash made from a beaten egg and a teaspoon of water. This will make the crust shiny and turn a beautiful golden brown in the oven.
  • Place a baking sheet on the rack below your cheeseburger pot pie in the oven just in case any of the filling bubbles over the sides of the skillet.
  • Serve your cheeseburger pot pie with ketchup, mustard, cheeseburger house sauce, or your favorite hot sauce for a spicy kick.

Sure. I prefer puff pastry since the lighter texture better complements the hearty beef filling. Pie crust is denser and typically better suited to pot pies with white meats like chicken or turkey, but you do you!

How do I thaw puff pastry?

It's usually pretty simple! Follow the instructions on the package for best results. Most will tell you to defrost the pastry in the fridge for a few hours or at room temperature for a half hour or so.

Can I use other types of cheese?

Sure! You can use a combination of melty cheeses like mozzarella cheese, Colby jack, Monterey jack, or pepper jack.

What sides do I serve with cheeseburger pot pie?

A light and refreshing simple green salad with a glass of dry red wine is my perfect pairing with cheeseburger pot pie. The best way to reheat leftover cheeseburger pot pie is in a 350-degree oven or air fryer for 10-15 minutes, depending on the size of the portion. Watch it to make sure the crust doesn't burn. Don't reheat leftover cheeseburger in the pot pie unless you like gummy pastry crust.

Ingredients

  • 2 pounds lean ground beef, I used 90/10
  • 2 cups onion, peeled and chopped
  • ½ cup boiling water
  • 1 tablespoon Beef Better Than Bouillon
  • ¼ cup pickle relish, sweet or dill
  • Salt and pepper to taste
  • 8 ounces sharp Cheddar cheese
  • 1 sheet puff pastry, thawed
  • sliced green onions for garnish

Instructions

  • Preheat the oven to 400F.
  • Mix the bouillon with the hot water.
  • Cook the beef and the onions in a heavy cast iron skillet.
  • When the beef is browned and the onion is tender pour off any accumulated fat if necessary.
  • Stir in pickle relish and bouillon.
  • Turn off heat.
  • Spread the Cheddar cheese over the top of the ground beef mixture, reserving ½ cup for the top if desired.
  • Remove the puff pastry from the refrigerator and roll out so that it's large enough to cover your skillet or casserole dish.
  • Carefully lay it over the cheese layer.
  • Sprinkle remaining cheese on top.
  • Bake for 20 minutes, or until the puff pastry is puffy and golden brown.
  • Remove from oven, sprinkle with green onion, and let stand for 10 minutes before serving.

Notes

Storage:
