❤️ Why you'll love it

  • Get the tangy flavor of buffalo chicken wings without all the hassle heating up the deep fryer.
  • You only need a few simple ingredients to make this great recipe.
  • Tastes even better the next day.

And, if that's not enough reason to love it how about the fact that you're getting 60 grams of protein in each serving AND it's low carb!

🧾 Ingredients

This is an overview of the ingredients. You'll find the full measurements and instructions in the green recipe card (printable) at the bottom of the page.

Ingredients for this recipe.

🔪 Instructions

This is an overview of the instructions. Full instructions are in the green recipe card at the bottom of the page.

Step by step images for buffalo chicken.
  1. Add buffalo sauce and softened cream cheese to a mixing bowl.
  2. Blend together until smooth and combined well.
  3. Cover the chicken breasts with the hot sauce mixture.
  4. Top with mozzarella cheese and cooked bacon, then bake in the oven.

🥫 Storage

Store leftovers in an airtight container in the fridge for up to three days.

You can freeze Buffalo chicken breasts for up to 3 months, however the texture of the sauce may change a little.

📖 Variations

  • If you want a milder sauce you can use mild buffalo wing sauce instead of hot sauce. Frank's Red Hot Sauce works well.
  • This recipe uses boneless skinless chicken breasts but you could use strips and make Buffalo chicken tenders, instead.
  • Or, cut the breasts into pieces and make "boneless wings"!
  • Substitute boneless chicken thighs.
  • Add blue cheese dressing or ranch dressing to the cream cheese mixture for more flavor - or drizzle it on top.
  • For a spicy Buffalo sauce add some cayenne pepper to the sauce.
  • A dash of garlic powder can give some extra flavor to your chicken.

💭 Tips

Expert Tip: Spray your baking dish well with cooking spray for easy clean-up.

  • Be sure to lay the chicken in a single layer so that it cooks evenly.
  • Be sure that the chicken cooks to an internal temperature of 160F and then you let it rest for 10 minutes. It will come up to a safe 165F during the resting period. Check it with an instant read meat thermometer to be sure.
  • My family likes to dip celery sticks in the extra sauce when this dish is finished baking.
  • This feeds 4 people with big appetites or 6 people with normal appetites.
  • Have leftovers? Make Buffalo chicken salad or Buffalo chicken wraps. SO good.

📞 The last word

I like this baked Buffalo chicken better than the classic Buffalo wings. It's so much easier to eat - I hate picking around those bones.

My family is picky but I like to sprinkle some blue cheese crumbles on the top of my serving. I love the cool, creamy texture and tangy flavor that it adds.

Next time try this creamy Tuscan chicken! It's an easy skillet meal that has all the bright, fresh flavor of the Italian countryside in every bite.
