This easy boneless Buffalo chicken bake is done in 30 minutes so it's wonderful for those busy weeknights when you're exhausted. You can even assemble it a day or so ahead and slip it into the oven when you get home from work.

This easy boneless Buffalo chicken bake is done in 30 minutes so it's wonderful for those busy weeknights when you're exhausted. You can even assemble it a day or so ahead and slip it into the oven when you get home from work.

Ingredients

  • 4 chicken breasts, boneless & skinless
  • 8 ounces cream cheese
  • ¼ cup hot sauce, Franks Red Hot is a classic ingredients
  • 3 strips bacon, cooked and crumbled
  • 1 cup Mozzarella cheese, shredded from a block
  • ¼ cup green onions, chopped
  • bleu cheese, as desired

Instructions

  • Preheat oven to 375 F.
  • Spray casserole dish with no-stick cooking spray.
  • Place chicken breasts in a casserole dish in a single layer.
  • Soften cream cheese in the microwave for a minute or so.
  • Whisk the softened cream cheese and hot sauce together.
  • Spoon over chicken breasts.
  • Top with cooked crumbled bacon.
  • Sprinkle shredded Mozzarella cheese over the top.
  • Bake in the 375 F oven for 20-25 minutes until chicken reaches an interior temperature of 160F.
  • Let rest for 10 minutes (the chicken will continue to cook to a safe 165F.)

Notes

Store leftovers in an airtight container in the fridge for up to three days.
You can freeze this dish for up to 3 months, however the texture of the sauce may change a little.
Tips:
  • Spray your baking dish well with cooking spray for easy clean-up.
  • Be sure to lay the chicken in a single layer so that it cooks evenly.
  • Be sure that the chicken cooks to an internal temperature of 160F and then you let it rest for 10 minutes. It will come up to a safe 165F during the resting period.
  • My family likes to dip celery sticks in the extra sauce when this dish is finished baking.
  • This feeds 4 people with big appetites or 6 people with normal appetites.

📖 Variations

  • If you want a milder sauce you can use mild buffalo wing sauce instead of hot sauce. Frank's Red Hot Sauce works well.
  • This recipe uses boneless skinless chicken breasts but you could use strips and make Buffalo chicken tenders, instead.
  • Or, cut the breasts into pieces and make "boneless wings"!
  • Substitute boneless chicken thighs.
  • Add blue cheese dressing or ranch dressing to the cream cheese mixture for more flavor - or drizzle it on top.
  • For a spicy Buffalo sauce add some cayenne pepper to the sauce.
  • A dash of garlic powder can give some extra flavor to your chicken.
