🧾 Ingredients
Nothing weird or hard to find here. This green enchilada chicken soup is built from grocery-store basics, a few cans, and enough cheese to ensure nobody mistakes dinner for a wellness retreat. Here's what you'll need.

- Boneless chicken breasts or thighs - Either works. Breasts stay a little leaner while thighs are richer and more forgiving. Use whichever one isn't currently demanding a ransom at the grocery store.
- Onion - Adds a little sweetness and gives the broth more depth as it cooks. Yellow or white onion is fine.
- Green chiles - Canned diced green chiles bring mild chile flavor without setting anybody's eyebrows on fire. Use hot if your household enjoys consequences.
- Green enchilada sauce - This does most of the flavor work, so use one you actually like. Mild, medium, or hot is entirely between you and your tolerance for drama.
- Chicken stock - Regular chicken stock works perfectly, but I used Old El Paso brand Tinga-style chicken stock, which has Mexican seasonings and a little tomato already added. It's an easy way to sneak another layer of flavor into the broth.
- Garlic, cumin, Mexican oregano, salt, and pepper - The supporting cast. Mexican oregano has a slightly citrusy, earthy flavor that's especially good with green chiles. And yes, garlic powder works just fine here because we're making dinner, not defending a thesis.
- Cream cheese - Makes the broth rich, creamy, and just thick enough without turning the whole thing into queso pretending to be soup.
- Half-and-half (light cream) - Loosens the cream cheese and gives the broth that silky finish. Warming them together before adding them to the crockpot helps everything melt smoothly instead of leaving little cream cheese blobs bobbing around like dairy icebergs.
- Monterey Jack cheese - Mild, creamy, and an excellent melter. It gives us plenty of cheesy enchilada business without overpowering the green chile flavor.
- Lime - Don't skip it. A squeeze at the end wakes up all that cream and cheese and keeps the soup from feeling too rich. Tiny green fruit. Important job.

Crockpot Green Enchilada Chicken Soup

- 1 ½ pounds boneless skinless chicken breasts , or thighs
- 1 cup onion, diced
- 4 ounces diced green chiles
- 28 ounces green enchilada sauce
- 2 cups chicken stock, I used Old El Paso Tinga Style
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- ½ teaspoon Mexican oregano, use regular oregano if you can't find the Mexican variety
- ½ teaspoon kosher salt, plus more to taste
- ¼ teaspoon black pepper
- 4 ounces cream cheese, softened and cubed
- 1 cup half-and-half, or heavy cream
- 8 ounces Monterey Jack cheese, 2 cups, shredded
- 1 tablespoon lime juice, plus more to taste
Instructions
- Add the chicken to the bottom of a 6-quart slow cooker.
- Add the onion, garlic, green chiles, enchilada sauce, chicken broth, cumin, oregano, salt, and pepper.
- Cover and cook on LOW for 4 to 6 hours or HIGH for 2½ to 3½ hours, until the chicken is tender and reaches 165°F internally.
- Remove the chicken to a plate and shred it with two forks. Return it to the slow cooker.
- Microwave the cream cheese and half-and-half together until the cream cheese is very soft, about 30-60 seconds, then whisk until smooth.
- Pour the cream mixture into the slow cooker.
- Add the Monterey Jack a handful at a time, stirring between additions until melted and creamy.
- Stir in the lime juice. Taste and adjust the salt, pepper, or lime. If the soup is thicker than you like, add a little additional chicken broth until it reaches the consistency you want.
- Cover and cook on LOW for another 10 to 15 minutes, just until everything is hot. Don't let it boil after adding the dairy, because dairy occasionally chooses violence when overheated.
Notes
- You can use rotisserie chicken instead of raw chicken to save time if you like. You'll just need to add the ingredients and heat it through. You could even make it on top of the stove.
- Add the lime at the very end. That little hit of acidity brightens the green chile flavor and cuts through the richness of the cream and cheese.
- Serve with crumbled tortilla chips and a little more grated cheese on top.
- Half & Half is sometimes called light cream.

😱 What can go wrong (and how to fix it)
This soup is pretty hard to offend, but dairy and slow cookers are frenemies that occasionally act out.
🌶️ The cream cheese is floating around in little white blobs. Soften the cream cheese and whisk it into the warm half-and-half before adding it to the crockpot. It'll melt into the broth much more smoothly.
🌶️ The soup is too thin. Leave the lid off for 15 to 20 minutes after adding the cheese and cream mixture. It'll thicken a bit as it sits, too, so don't start throwing thickeners at it immediately.
🌶️ The soup is thicker than you wanted. Stir in a little extra chicken stock until it's exactly where you want it. Soup consistency is not a legally binding agreement.
🌶️ The chicken is dry. Chicken breasts can get cranky when they're cooked too long. Shred them as soon as they're tender and avoid leaving the soup cooking on high for hours after they're done. Thighs are more forgiving if that's a recurring problem.
🌶️ The dairy looks separated. Add the cream cheese, half-and-half, and Monterey Jack toward the end of cooking and don't let the soup boil afterward. High heat and dairy have a notoriously unstable relationship.
🌶️ It's hotter than expected. Green enchilada sauces and canned chiles vary quite a bit by brand. Stir in a little extra cream or top each bowl with sour cream to calm things down. Next time, choose mild sauce and chiles.
