🗝️ Key takeaways: why this recipe is your new favorite

  • With this easy crockpot recipe, you won't have to roll out pie dough or dirty any pots or pans—talk about simple prep!
  • Whether you've got the sniffles or just a busy day ahead, serve chicken pot pie soup anytime you need good 'ol comfort food.
  • Waxy potatoes are best for crockpot recipes. Unlike russet potatoes, they keep their shape and tender texture during slow cooking.

Creamy chicken, tender veggies, and a buttery biscuit topping (homemade or storebought) are guaranteed to satisfy the whole family. Just dump the ingredients in your crockpot and let it do the rest—it's really that easy!

🧾 Gather your ingredients: what you'll need

This is an overview of the ingredients. You'll find the full measurements and instructions in the green recipe card (printable) at the bottom of the page.

The recipe ingredients with text overlay.

📖 Make it your own: yummy variations

  1. Yukon gold or fingerling potatoes are also great options for this crockpot soup.
  2. You can use boneless skinless chicken thighs instead of breasts for a richer flavor.
  3. Have a leftover rotisserie chicken carcass? Use it to make homemade chicken broth!
  4. Use refrigerator biscuit dough or bake delicious buttermilk biscuits from scratch—my easy biscuit recipe is foolproof!
  5. Instead of potatoes, use rice or short pasta. Stir in cooked pasta or rice (either stovetop or microwave Minute rice) just before serving.

🔪 Step-by-step guide: instructions for success

💭 Insider tips: things to know

  1. Stick with waxy, firm red, gold, or fingerling potatoes. Russets are too starchy and turn to mush in soups.
  2. Cut the chicken, fresh veggies, and potatoes into bite-sized pieces so they’re not a choking hazard for your little ones. This also helps them cook evenly.
  3. Use your favorite frozen veggie mix—no thawing needed. You can also switch up the blend if you like. Green beans, peas, corn, and mushrooms are tasty in chicken pot pie soup!

Marye's Tip o' the day

Use a crockpot liner to make cleanup effortless!

🥫 Leftover love: how to store and reheat slow cooker chicken pot pie soup

Let the soup cool, then keep it in an airtight container in the fridge for up to four days.

Freeze chicken pot pie soup in a freezer-safe container for up to three months. Thaw overnight in the fridge.

When storing leftovers, keep the biscuits separate. You can store biscuits at room temperature for a few days or frozen for months.

Warm leftover soup on the stove over medium heat, stirring occasionally. If it’s too thick, add a splash of broth or milk. You can also use the microwave for quicker reheating.

🤫 Marye's secret for zhuzhing it up

Serve chicken pot pie soup in hollowed-out crusty bread bowls to make the soup even heartier and more special. Add some fresh herbs on top (like parsley) for restaurant-worthy presentation!

zhuzh: verb. To make something more interesting or attractive

👩‍🍳 Let's answer those questions: FAQs

Have other questions? Ask me in the comments!

Can I add different seasonings to chicken soup?

Sure. Add a dash of creole seasoning, smoked paprika, ground mustard, garlic powder, or a pinch of chili flakes. A bay leaf adds more depth of flavor—just remember to remove it before serving.

What biscuits work best for chicken pot pie soup?

Store-bought biscuits are just fine, but homemade buttery biscuits take this recipe to the next level. Even crescent rolls work in a pinch!

How do I make crockpot soup on the stovetop?

You’ll need to pre-cook your chicken or use leftover shredded chicken. Then, saute the fresh veggies in a large pot with oil or butter until softened, and add the potatoes, chicken stock, cream of chicken soup, and seasonings.

Cover and bring the mixture to a boil. Reduce the heat to medium and simmer for 10-15 minutes until the potatoes are tender. Add the cooked chicken and frozen veggies, cover, and simmer for five more minutes.

Can I make gluten-free chicken pot pie soup?

Yep, as long as you buy gluten-free cream of chicken soup. The regular kind generally contains flour.

⏲️ Marye's time saving hacks -

Want to simplify prep even more? Don't like cutting raw chicken? Use cooked rotisserie chicken instead of fresh chicken breasts! Just wait to add it to the crockpot until the last 15-20 minutes of cooking.

🍽️ No waste: creative ways to repurpose chicken pot pie soup

Give leftovers a new lease on life with these easy ideas. The whole family will love 'em!

  • Cook some pasta (like penne, rotini, or gnocchi), mix it with the chicken pot pie soup, and top with shredded cheese and crushed Ritz crackers. Bake until bubbly and golden for a comforting casserole.
  • Hollow out bell peppers, fill them with the leftover soup and rice, and bake until they are tender for a fun twist on stuffed peppers.
  • Mix leftover chicken soup with steamed rice for a stew-like dish. Add a can of cannellini beans for more bulk, and stir in some hot sauce to finish it off.

📞 Wrapping it up: the last word

Cold weather means hot soup around here! I love it - could eat it every day all year. This creamy concoction is hearty enough to fill up that hungry family and delicious enough to have them licking their bowls.
