Ingredients for rose sorbet.

🔪 Instructions

This is an overview of the instructions. Full instructions are in the green recipe card at the bottom of the page.

Y'all - this just could not be easier to make. If you don't have an ice cream maker it's ok! I have instructions for making it without one.

Step by step images for how to make sorbet with wine.
  1. Add sugar to a heavy saucepan.
  2. Add the water.
  3. Bring to a boil.
  4. Let boil until all the sugar crystals are dissolved and the liquid is clear.
  5. Remove from heat and add the wine.
  6. Squeeze in the citrus if you are using it.
  7. Chill in the refrigerator.
  8. Add to the machine and freeze according to manufacturers instructions. OR follow instructions in the recipe for freezing in your freezer.
  9. Serve in small servings garnished as you like.

💭 Things to know

Expert Tip: The alcohol does not cook out and this should not be served to children or people who should not, or prefer not to, have alcohol.

  • Keep your wine sorbet smooth by making sure all the sugar crystals are dissolved. Take out a spoonful of the liquid and rub it between your fingers. If you feel any grittiness let it simmer a minute or two longer.
  • Use any variety of wine you like - or even a combination! Imagine a sangria wine sorbet....mmmmm!
  • Make it the day before serving and let it freeze overnight.
  • Put the serving dishes in the freezer for a bit before adding the sorbet. It will help it stay frozen.
  • Once you've put it in the serving dishes serve it immediately because it will melt fast!
  • Adjust the sugar to the sweetness of the wine. Always taste before chilling.
  • If you have to add more sugar be sure to bring the liquid to a boil so that the new sugar crystals are completely dissolved.
  • Add a little citrus (orange, lime, or lemon juice) to sweet wines to help balance the flavors but drier wines won't need the citrus - unless you want it.
Finished pink wine sorbet garnished with berries. Two glasses of wine are in the background.

👩‍🍳 FAQs

Is there any milk in sorbet?

Not at all. Ice cream has milk and/or cream but sorbet is made from water, sugar, and fruit puree or juice. Wine counts as juice, right?
That keeps the flavor fresh and clean, which is why it's often used as a palate cleanser between courses.

Is there alcohol in it?

Sometimes, but not all the time. Sorbet recipes sometimes call for a little alcohol to improve the texture. Of course, since this is a wine sorbet recipe there is definitely alcohol it!
