Ingredients

  • 1 pound diced ham
  • 32 ounces frozen tater tots, divided
  • 12 ounces frozen bell peppers and onion mix
  • ½ cup milk
  • ½ cup cream, or half and half
  • 6 eggs
  • 1 cup grated Cheddar cheese, divided
  • 1 cup grated Pepper Jack cheese, divided
  • green onions, sliced for garnish

Instructions

  • Spray the slow cooker with non-stick spray.
  • Mix the two cheeses together in a bowl.
  • Pour half of the tater tots into the bottom of the prepared slow cooker.
  • Add the ham on top.
  • Sprinkle with the bell pepper mix.
  • In a mixing bowl, whisk together the eggs, milk, cream, and half the cheese mixture.
  • Pour the egg mixture over the tater tots, ham, and peppers layer.
  • Top with the remaining tater tots.
  • Cover and cook on low for 4 hours.
  • 15 minutes before serving top with the rest of the cheese and put the cover back on.
  • Sprinkle with green onions and serve.

Notes

Storage:
Once cooled, refrigerate the extras in an airtight container or a casserole dish covered tightly in plastic wrap for up to three days or freeze for up to three months.
Tips:
  • You don't need to thaw the frozen tater tots or veggies before adding them to the crock pot-just toss 'em in straight out of the freezer.
  • Grease the inside of your crock pot with cooking spray or olive oil to prevent your casserole from sticking to the bottom of the slow cooker.
  • To reduce the cooking time on busy mornings, you can cook this on high for about two hours.

🔪 How to make crockpot tater tot breakfast casserole

There are recipes that require careful timing, multiple pans, and the patience of a saint. This isn't one of them. Just layer the ingredients, close the lid, and let the slow cooker earn its spot on the countertop.

  1. Scatter half of the frozen tater tots across the bottom of the slow cooker, then blanket them with the diced ham. You're building a solid foundation here, and potatoes have never let anybody down.
  2. Sprinkle the frozen onions and peppers evenly over the ham. No chopping, no tears, no tiny onion pieces hiding under your cutting board.
  3. Mix the Pepper Jack and Cheddar together. In a large bowl, whisk together the eggs, milk, half-and-half, and half of cheese mixture. Pour the mixture over the vegetables and let it settle into all the nooks and crannies.

🥔 The eggs are overcooked around the edges.
Every slow cooker has its own personality, and some run hotter than others. Start checking for doneness about 30 minutes before the suggested cooking time. The casserole is ready when the center is just set.

🥔 The tater tots aren't crispy.
That's the nature of slow cooking. The tots become tender and soak up all that cheesy egg mixture instead of getting crunchy. If you want a crispier top, pop individual servings under the broiler for a minute or two before serving.

🥔 The casserole sticks to the crockpot.
Be generous with the nonstick cooking spray before adding the ingredients. A slow cooker liner also makes cleanup ridiculously easy if you're feeding a crowd.

🥔 The cheese separated a little.
