Optional Glaze

- Let cool to 110℉ and brush rolls before baking.

Notes
-
- Using water that's too hot or cold will prevent your rolls from rising well.
-
- You may not need to use as much flour as I did, or you may need a little more. Trust your gut and how the dough feels.
- I find it takes about 5 minutes to cook a sweet potato in the microwave. Push a knife to the center and remove it. Place in the microwave until soft, about 5 minutes, then cut open and remove the peel. Mash with a fork to get out all the lumps.

🧾 Ingredients you'll need for sweet potato dinner rolls
These are the humble little ingredients that join forces to create the soft, buttery, fall-flavored rolls your family will inhale like they haven't eaten since Labor Day. Nothing weird, nothing fancy-just the kind of basics that turn into pure carb magic when you're not looking.

- Yeast - The fragile little princesses that puff up the dough when and only when you treat them right.
- Ginger - Just a flick to smack the yeast awake. Not here for flavor, here to shout, "MOVE, BABY, WE'RE LATE."
- Potato water (or warm water) - Use potato water if you want rolls softer than a preacher's handshake. Use regular water if you're already over everyone today.
- Bread flour - The backbone. The bouncer. The thing keeping these rolls from collapsing like your ex's promises.
- Pumpkin pie spice - A sprinkle of fall vibes, not a personality trait.
- Salt - Because bland bread is a sin and we don't commit culinary crimes in this kitchen.
- Sweet potato - The golden mash that makes these rolls tender, cozy, and dangerously addictive.
- Brown butter - Toasty, nutty, and deeply dramatic. Adds richness and a little "I tried today" flair.
- Sugar - For sweetness.
- Brown sugar - For deeper sweetness, because some of us have layers.
- Eggs - For richness, structure, and that glossy "I'm an adult and I pay my taxes on time" finish.
🔪 How to make these easy sweet potato yeast rolls
These rolls come together with the kind of kitchen magic that looks chaotic at first, then suddenly turns into pure carb glory. Follow these steps and you'll have soft, golden sweet-potato rolls that taste like fall swooped into your kitchen wearing a velvet cape and good intentions.

- Mix the chaos together: Yeast, sweet potato, brown butter, sugar, eggs - everything goes in the bowl like a family reunion with no boundaries. Stir until it looks questionably lumpy.
- Bring it together: Add flour and pumpkin pie spice and keep mixing until it transforms from "gloppy swamp creature" into "thick fall dough situation."
- Knead like you mean it: Turn it out and knead just long enough for the dough to behave. A little sticky, a little sassy - perfect.
- Let it rise: Tuck the dough into a bowl, give it a warm spot, and let it double until it's so puffed up it thinks it's running the place.

I don't recommend it-your sweet potato dinner rolls won't rise as much and won't have the right chewiness. Different types of flours work differently. Learn more about bread flour here.
The yeast, sugar, and water mixture should get foamy after five minutes or so. If it doesn't look any different, your yeast might not be good anymore. (However, you may just have used water that was too hot or cold and damaged the yeast.)
Nope. Rapid-rise yeast doesn't require activation, so you can add it to the ingredients as written without any waiting time in step two.

⏲️ Marye's time saving hacks -
Make rolls ahead to save valuable time on holiday dinner prep. You can either:
- Make the dough, let it rise, shape the rolls, and freeze 'em unbaked. Thaw in the fridge overnight, then bake as directed.
- Make the rolls and bake them just until done, but not browned. Cool and freeze. When you're ready to serve them, bake until golden brown like brown 'n serve rolls-no need to thaw.
