Ingredients

  • 1 lb bulk pork sausage, hot or mild
  • 2 cups biscuit mix, like Bisquick
  • 1 ½ cups shredded sharp cheddar, shred from a block for best results
  • ½ cup homemade or store-bought pimento cheese
  • ¼ teaspoon garlic powder
  • ¼ teaspoon smoked paprika, optional, but delicious

Instructions

  • Preheat oven to 375°F. Line a baking sheet with parchment or foil (or don't and repent later).
  • In a large bowl, combine all the ingredients. Use your hands-like your mama taught you-to really squish everything together until it's well blended.
  • Roll into 1-inch balls and place on the baking sheet.
  • Bake for 18-22 minutes, until golden brown and cooked through.
  • Serve warm with ranch, comeback sauce, or straight off the tray like a heathen.

Notes

Storage:
Toss any leftover sausage balls in an airtight container and refrigerate for up to 4 days—if they last that long. To reheat, just pop 'em in a 350°F oven for about 8 minutes.
Tips:
  • Don't overmix - We're making snacks, not paving a driveway. Mix until just combined to keep things tender, not tough.
  • Use cold ingredients - Cold sausage and cold pimento cheese make for easier mixing and better texture.

    if you have the sausage in the freezer and Bisquick in the cupboard , cheese in the 'fridge and a few pantry items on hand you can be ready to make these at a moments notice for those unexpected guests. haven't found anyone who doesn't like 'em

    Pimento cheese and sausage balls. How can you go wrong with that? Yum! I think that I would use spicy sausage. Plus a drizzle of hot honey over the top! Mmmmm

    I am in love with the club crackers, spread with cream cheese (chive variety) and wrapped in a 1/2 slice of thin bacon. Bake until crispy. YUM!
