Sweet, fruity, and totally tropical this coconut mai tai will have you dreaming of the beach. Make it by the pitcher for parties.

Sweet, fruity, and tropical, this coconut mai tai is absolutely unforgettable. Make it by the pitcher because it's sure to go fast! Pineapple juice, orange juice, spiced rum, and more give it flavor and kick.

Coconut Mai Tai is a taste of the tropics when you can't go on vacation... sweet, fruity, and exotic. restlesschipotle.com

I have had vacation on the brain for weeks. In the past couple of years we've taken cruises with the kids but this year, between Sean's surgery and other stuff there was no way. I still wanted to take some sort of vacation so we rented a condo on the beach in Port Aransas. It's right on the beach, just a quick walk over the dunes. I plan on spending a lot of time looking for shells and jumping waves. I'll also be sharing plenty of pictures on social media so be sure to follow me on Instagram, Facebook, and Twitter if you don't already.

My daughter and son-in-law are going to live here for the week to take care of the house and dogs/cats. Plus, it kind of gives them a vacation since the house is bigger, there's a deck and pool, and more property. I am so blessed that they're willing to stay.

Anyway, one of the things I've enjoyed on the cruises was to sit out on the balcony with a tropical drink and just watch the ocean and the sky. Fruity, tropical drinks just seem to be the epitome of summer vacation, don't they?

I wanted a little more coconut flavor than is usually in a Mai Tai so I decided to blend a little Coco Lopez in with the fruit juice. WOW!

I am not going to tell you that drinking this is going to give you the same feeling as sitting on the balcony and watching the ocean, or laying on the beach, or even sitting by a pool. Well, maybe if you drink enough... What I can promise is that this stuff is really good.

This 90 ounce pitcher comes with six goblets that work great with Mai Tais and other tropical drinks. I use my set all the time -- I've just had to stick with stemless glasses because I'm horrid about breaking the stems off!

Libbey 7 piece Carolina set includes one 90 ounce pitcher and 6 16 ounce footed goblets.

We love cruises too. My favorite part is also sitting on the balcony with a cocktail. I love watching the water and looking for dolphins. This drink will bring me right back there.
