🥰 Is this slow cooker French onion meatloaf recipe for you?
- You want the whole dinner handled. Meatloaf, potatoes, carrots, and gravy all from one slow cooker. Somebody alert the church ladies.
- You love French onion flavor. Sweet, savory onions, beefy goodness, and rich gravy without babysitting a skillet all afternoon.
- You need comfort food without the production. It's Sunday dinner energy on a Tuesday schedule, and nobody has to know how little work you did.
🧾 Ingredients
A packet of onion soup mix brings the beefy flavor, garlic-cheese croutons add a savory little twist, and a few everyday ingredients turn the whole thing into a proper Sunday supper. The kind that used to require three pans, a prayer, and somebody assigned to wash dishes.
If you love that rich, savory onion flavor, my slow cooker French onion pot roast is another cozy dinner worth putting on the menu.

- Onions: They'll soften and sweeten as they cook, giving you all that glorious French onion flavor.
- Butter: For sautéing the onions until they're soft and lightly golden.
- Lean ground beef: Lean enough to keep the gravy from turning into a grease slick. I used 90/10.
- Dry onion soup mix: Our little packet of concentrated onion magic. No need to spend three hours coaxing flavor out of a saucepan.
- Cheese and garlic croutons: Crush them into fine crumbs so they blend into the meatloaf instead of leaving little crunchy surprises.
- Eggs: Hold everything together so your meatloaf slices instead of collapsing into a pile of seasoned ground beef.
- Milk: Adds moisture and helps soften those crouton crumbs.
- Worcestershire sauce: A little savory depth that makes the beef taste even beefier.
- Beef stock: Creates a rich, flavorful cooking liquid that becomes the gravy.
- Yukon Gold potatoes: Their buttery texture makes them perfect for soaking up that onion gravy and you don't have to peel them!
- Baby carrots: Because apparently we're responsible adults who serve vegetables with dinner.
- Cornstarch (optional): For thickening the cooking juices into luscious onion gravy. Because gravy should cling to your meatloaf, not run off like it's late for an appointment.

- 2 large onions, sliced - about 3 cups
- 1 tablespoon butter
- 2 pounds lean ground beef, 90/10
- 1 ounce dry onion soup mix
- 1 cup cheese and garlic croutons, crushed to fine crumbs
- 2 eggs
- ¾ cup milk
- 1 tablespoon worcestershire sauce
- 1 cup beef stock
- 6 yukon gold potatoes, cut in half if medium sized, ¼ths if larger.
- 1 cup baby carrots
- cornstarch, optional for thickening gravy
Instructions
- Line a slow cooker with aluminum foil then spray with no-stick cooking spray. This helps get the meatloaf out easily for slicing.
- Crush the croutons in a blender or with a rolling pin. Set aside.
- Melt the butter in a skillet over medium-high heat.
- Add the onions and cook for about 10 minutes, stirring occasionally, until softened and lightly browned.
- Put in the bottom of the slow cooker.
- In a large bowl, combine the ground beef, beefy onion soup mix, crouton crumbs , eggs, milk, and Worcestershire sauce.
- Mix gently until everything is combined, then shape into a loaf.
- Place the meatloaf in the slow cooker on top of the onions.
- Add ½ cup of the beef stock, along with the potatoes and carrots. Reserve the remaining ½ cup to add during cooking if needed or to add to the optional gravy.
- Cover and cook on LOW for 4-6 hours or until the center reaches 160°F.
- Remove meatloaf and vegetables from slow cooker.
- Slice and serve with the onions and cooking juices spooned over the top.
To thicken gravy (optional
- Pour juices into a pan.
- Whisk 1½ tablespoons cornstarch with 1½ tablespoons cold water for every cup of cooking liquid you poured off the meatloaf.
- Stir into the hot liquid and simmer for 1 to 2 minutes, until thickened.
Notes
- Don't skip sautéing the onions. Those few minutes in the skillet bring out their sweetness and give the gravy that rich French onion flavor. Raw onions just don't have the same charm.
- Use a light hand when mixing. Work the ingredients together just until combined. Overmixing makes meatloaf dense, and we're making dinner, not building a retaining wall.
- Use a foil sling. Line the slow cooker with heavy-duty aluminum foil, leaving enough hanging over the sides to lift the meatloaf out without it falling apart.
- Keep the lid closed. Every time you lift it to admire your handiwork, heat escapes and cooking takes longer. The meatloaf doesn't need supervision.
- Let it rest before slicing. Give the meatloaf about 10 minutes to settle so you get nice slices instead of a delicious but slightly unfortunate pile of beef.

If your slow cooker has seen better days, the Ninja PossibleCooker is worth a look. It's roomy enough for a family-sized meatloaf dinner, and you can sauté those onions right in the pot before switching to slow cooking. One less skillet to wash, which is practically a love letter from the kitchen gods.
😱 What can go wrong (and how to fix it)
🥕 Your meatloaf falls apart when you slice it. You probably got a little enthusiastic with the milk or didn't crush the croutons finely enough. Mix gently, shape the loaf firmly, and let it rest for 10 minutes before slicing. Patience. An irritating but occasionally useful virtue.
🥕 The meatloaf turns out dry. Lean ground beef can go from delicious to disappointing if you cook it too long. Start checking the internal temperature at 4 hours and remove it when the center reaches 160°F.
🥕 Your potatoes are still hard. Cut them into evenly sized pieces and tuck them down into the cooking liquid. Giant potato chunks have no respect for your dinner schedule.
🥕 The gravy is too thin. Slow cookers hold onto moisture like a Southern grandmother holds onto family secrets. Transfer the cooking juices to a saucepan and whisk in a cornstarch slurry, then simmer until thickened.
🥕 Your meatloaf has a strange, lumpy texture. Crush those cheese and garlic croutons into fine crumbs before mixing them into the beef. Big pieces don't always soften properly, and nobody ordered meatloaf with architectural features. For now, just shave the lumps off the top with a sharp knife and cover with gravy.

Not in the mood for beef? My crockpot French onion chicken brings all that savory onion goodness to the dinner table, too.
