❤️ Why you'll love it
- Done in less than 5 minutes
- Makes any breakfast a little cozier
- It's delicious
This easy strawberry butter recipe always turns my breakfast table into a country B&B! It's easy to make but adds a sweet touch to pancakes, waffles, French toast, and hot biscuits.
I love it on toasted multigrain bread.
🧾 Ingredients

I like to add a little strawberry jam because it just makes the flavor more intense. You really only need the berries, sugar, and unsalted butter to make this recipe.
🔪 Instructions

- Clean, stem, and slice strawberries.
- Use the food processor, immersion blender, or hand mixer to puree the berries.
- Add the lime, vanilla, strawberry jam, and sugar. Stir in until well blended.
- Add the room-temperature butter and whip at high speed of an electric mixer until smooth. * After I did these images I found that whipping the butter and sugar together then mixing in the berries works MUCH better.
- Refrigerate until firm, at least two hours - the flavor is better after a couple of hours.
🥫 Storage
Store strawberry butter mixture in an airtight container for up to a week in the refrigerator. You can freeze it for up to three months.
You can also form it into a butter log. When it is chilled spoon it onto waxed paper and then form it into a firm roll. Twist the ends of the waxed paper firmly and refrigerate.
Once the roll is well chilled you can just slice off rounds as you need them.

💭 Tips
Expert Tip: Be careful. The butter will pick up refrigerator or freezer odors if the fridge isn't clean. Don't put it in the freezer with fish!
- Have all the ingredients at room temperature - they'll blend better.
- Mix the butter and powdered sugar before you add the berries - it will be smoother than way and less likely to separate. I learned this the hard way!
- For the best flavor the strawberries should be good and ripe.
- Don't blend the berries into mush - pulse to make them finely chopped.
- Adjust the amount of confectioner's sugar to your own tastes.
- You can form the strawberry butter into logs and slice as needed.
- It will keep about a week in the refrigerator - longer in the freezer.
- Like any butter, this fruit butter will take on off flavors from refrigerator smells.
- Any soft fruit will work - blueberries, blackberries, raspberries (mmm raspberry butter), peaches...
- Frozen fruit does not work well - it's too watery.
👩🍳 FAQs
Here are the questions I am most frequently asked about this recipe.
I have had this happen, too. It works best if you stir the berries into the butter and sugar after it's whipped. It seems to be less likely to separate BUT if it does separate it's STILL delicious - just not quite as pretty.
I don 't recommend it - I don't think it works as well because it is watery.

Homemade whipped strawberry butter is so quick and easy to make you'll want to enjoy it all season long! It's delicious melting into a pink puddle on a hot biscuit or smeared across popovers. This simple recipe is very similar to the iconic strawberry butter that Neiman Marcus has served with their popovers for decades.
Be sure to grab a batch of summer ripe strawberries and make this soon! It's not as good with out of season berries.

✍🏻 A note from Marye...
I know y'all don't always like the stories bloggers tell so when I have one I try to put it at the very bottom so you can read or skip as you like.
Neiman Marcus in downtown Dallas is the original. It's sat in the same spot since it was built in 1914 to replace the old Neiman Marcus building which had burned down.
When I was a little girl in the 1960s my mother took me there to shop once in awhile but birthdays were always an occasion for lunch at the Zodiac Room. White gloves, poufy dress, and shiny patent leather shoes with bright buckles - because back then you dressed up to shop.
Over the past few years my friend has been taking me to the Zodiac Room for my birthday and we are always excited about the billowy popovers served with sweet, whipped strawberry butter.
I think that my version is a touch better than their version but they totally have me beat with tuxedoed waiters and white linen tablecloths.
I hope that someday you'll get a chance to enjoy a lunch at Neiman's in downtown Dallas but until then make a batch of this fresh strawberry butter and enjoy!
