Get ready to wow your taste buds with this easy strawberry butter recipe! This simple homemade spread is perfect for breakfast or brunch, adding a burst of sweet, fruity flavor to your favorite breads, biscuits, and pancakes.

Neiman Marcus serves it with big popovers in the Zodiac Room in the downtown Dallas store but you can have it anytime - it's so easy!

I like to add a little strawberry jam because it just makes the flavor more intense. You really only need the berries, sugar, and unsalted butter to make this recipe.

How to Make Strawberry Butter
  1. Clean, stem, and slice strawberries.
  2. Use the food processor, immersion blender, or hand mixer to puree the berries.
  3. Add the lime, vanilla, strawberry jam, and sugar. Stir in until well blended.
  4. Add the room-temperature butter and whip at high speed of an electric mixer until smooth. * After I did these images I found that whipping the butter and sugar together then mixing in the berries works MUCH better.

Add a splash of balsamic vinegar for a surprising depth of flavor that complements the sweetness of the strawberries!

🍴Must have tools: essential equipment

  1. food processor or immersion blender
  2. electric mixer
  3. mixing bowls
  4. measuring cups and spoons
  5. paring knife

🥫 How to store strawberry butter

Store strawberry butter in an airtight container in the refrigerator for up to a week. A jar with a tight-fitting lid is ideal.

You can also freeze it for up to 3 months for longer storage.

You can also form it into a butter log. When it is chilled spoon it onto waxed paper and then form it into a firm roll. Twist the ends of the waxed paper firmly and refrigerate.

Once the roll is well chilled you can just slice off rounds as you need them.

Be careful. The strawberry butter will pick up refrigerator or freezer odors if the fridge isn't clean. Don't put it in the freezer with fish!

  1. Use fresh, ripe strawberries for the best flavor.
  2. Make sure your butter is at room temperature before mixing for a smooth, creamy texture.
  3. Mix the butter and powdered sugar before you add the berries - it will be smoother than way and less likely to separate. I learned this the hard way!
  4. Don't blend the berries into mush - pulse to make them finely chopped.
  5. Adjust the amount of confectioner's sugar to your own tastes.
  6. Frozen fruit does not work well - it's too watery.

The butter and strawberries seemed to separate! Why?

I have had this happen, too. It works best if you stir the berries into the butter and sugar after it's whipped. It seems to be less likely to separate BUT if it does separate it's STILL delicious - just not quite as pretty.

Can I use frozen fruit?

I don 't recommend it - I don't think it works as well because it is watery.

Ingredients

  • 1 cup butter, room temperature
  • ½ cup strawberries, pulsed in a food processor to a puree
  • ¼ cup powdered sugar, more as desired
  • 1 tablespoon lime zest, optional
  • 1 tablespoon strawberry jam, optional - adds more flavor
  • ½ teaspoon vanilla, optional

Instructions

  • Whip the softened butter and powdered sugar together.
  • Mix in the jam, lime, and vanilla if you are adding these ingredients.
  • Fold in the strawberry puree.
  • Refrigerate in an airtight container until firm. Or, for slices, you can roll it into a log shape and wrap tightly in wax paper twisting the ends to seal.
  • Use as desired.

Notes

Tips: 
  • Be careful. The butter will pick up refrigerator or freezer odors if the fridge isn't clean. Don't put it in the freezer with fish!

I know y'all don't always like the stories bloggers tell so when I have one I try to put it at the very bottom so you can read or skip as you like.

Neiman Marcus in downtown Dallas is the original. It's sat in the same spot since it was built in 1914 to replace the old Neiman Marcus building which had burned down.

When I was a little girl in the 1960s my mother took me there to shop once in awhile but  birthdays were always an occasion for lunch at the Zodiac Room. White gloves, poufy dress, and shiny patent leather shoes with bright buckles - because back then you dressed up to shop.

Over the past few years my friend has been taking me to the Zodiac Room for my birthday and we are always excited about the billowy popovers served with sweet, whipped strawberry butter.

I think that my version is a touch better than their version but they totally have me beat with tuxedoed waiters and white linen tablecloths.

I hope that someday you'll get a chance to enjoy a lunch at Neiman's in downtown Dallas but until then make a batch of this fresh strawberry butter and enjoy!
