🗝️ Why this burger's worth the calories
It's got Southern swagger in every bite-bold, messy, unapologetic. The pimento cheese melts inside like a love letter written in cheddar and chiles. Every juicy, smoky, slightly spicy mouthful tastes like summer evenings and bad decisions you'd make all over again. You'll feel like a grill goddess and look like one too, tongs in hand and a smirk that says, "Y'all weren't ready for this."
🧾 The 5 ingredients for pimento cheese burgers
Every ingredient in this burger has a job to do-none of them are here just for decoration. The pimento cheese brings the swagger, the beef stock keeps things juicy enough to make a preacher cuss, and the onion soup mix adds that smoky diner magic that makes the whole backyard smell like Saturday.
- Pimento cheese - Homemade pimento cheese or store-bought, just make sure it's the kind that bites back a little. Sharp cheddar, diced pimentos, and enough spice to make your tongue raise an eyebrow. I add a little jalapeno to mine.
- Beef stock - A splash or two keeps your patties tender and full of flavor instead of turning into hockey pucks.
- Lean ground beef - 90/10 is the sweet spot-enough fat for flavor, not enough to set the grill on fire and scare the neighbors.
- Onion soup mix - The old-school secret weapon. Adds depth, savoriness, and that "why is this burger so dang good?" flavor you can't quite name.
- Buns - Toasted, buttered, and sturdy enough to hold in the molten pimento cheese lava without collapsing into shame.

Pimento Cheese Stuffed Burgers
Print Pin Recipe Rate RecipeIngredients
- 1 ounce onion soup mix
- 2 pounds lean ground beef, 90/10 is what I use
- ½ cup beef stock, or water
- ¾ cup pimento cheese, store-bought or homemade
- 8 hamburger buns
Instructions
- Combine all ingredients except pimento cheese and buns in large bowl.
- Mix well.
- If you have time let it sit for 20 minutes. The flavor really infuses the meat that way.
- Shape into 16 thin patties - use a food scale to ensure they are all the same size.
- Place 1.5 tablespoons of pimento cheese in the center of 8 of the patties.
- Top with the remaining patties and press edges together tightly to seal..
- Grill, pan fry, or broil until done to your liking, about 12 minutes.
- Place burges on buns and serve with your favorite toppings.
Notes
- Seal the edges tight. Treat it like a pastry, not a patty-press those seams closed or your cheese will make a run for it.
- Chill before cooking. Pop the stuffed patties in the fridge for 15-20 minutes before grilling to help them hold their shape.
- Let rest for 5 minutes before eating.

🔪 How to -stuff burgers with pimento cheese
This isn't rocket science-it's better. You're just shaping beef around a spoonful of pimento cheese and letting the grill (or skillet) work its smoky magic. The trick is sealing the edges tight so that molten gold stays tucked inside till you take that first glorious bite. A little messy, a little indulgent, and a whole lot of "bless your heart, that's good."
- Mix the magic. In a big bowl, combine the ground beef, onion soup mix, and a good splash of beef stock. Use your hands-don't be shy. You're building flavor, not doing surgery.
- Patty prep. Shape the beef into thin patties, about ¼ inch thick. Lay half of them on a parchment-lined sheet like soldiers awaiting glory.
- Stuff 'em good. Drop a hearty spoonful of pimento cheese onto the center of each patty, then top with another one. Pinch those edges tight like you're sealing state secrets-no leaks allowed.
- Sear and sizzle. Cook the burgers in a hot skillet or on the grill until browned and juicy, about 4-5 minutes per side. When the cheese starts whispering through the crust, you know it's time to eat.

Sure can. Form and stuff the patties, then cover and refrigerate them for up to 24 hours before cooking. Just bring them to room temp before tossing them on the grill-cold meat and hot fire don't play nice.
Yep. Bake at 375°F for about 20 minutes, flipping halfway through. Not quite the same smoky drama, but still delicious.

🍽️ What to serve with hamburgers stuffed with pimento cheese
While I have been known to stand at the fridge, with the door open, stuffing a cold one of these in my mouth at midnight they're so much better as a full dinner. I like to serve these with a simple side like fried potatoes or sweet and spicy oven roasted sweet potatoes
