Air Fryer Keto Meatloaf

Keto meatloaf is done in 10 minutes in an air fryer! This easy recipe for one person has just 2 carbs and is over the moon delicious! Instructions for baking in a conventional oven included.

Let's start with JUST. TWO. CARBS.

Keto meatloaf for one means that you don't have to eat the same thing every day for a week when you're on a different eating plan from the family AND you won't be tempted by their plates, either!

Quick, easy, delicious? This recipe has it all!

🧾 Ingredients

Just make sure the Parmesan is the shelf stable kind in the green canister not the freshly grated kind in the dairy section.

  1. Mix the meat, shredded Cheddar, Parmesan, onion, green bell pepper, and chopped garlic in a bowl.
  2. Blend well.
  3. Beat the egg and tomato sauce and add it - knead it in until completely blended.
  4. Poke holes in parchment and place over the air fryer rack. Form the beef mixture into a small loaf and brush with more tomato sauce. Air fry at 375F for 15 minutes, or until center is 160F. Let stand 5 minutes before serving.

💭 Tips

Expert Tip: 85/15 ground beef works best. There's enough fat to carry the flavor but not so much that the air fryer is a pain to clean up.

  • You can use ground turkey as well.
  • Line the bottom of the air fryer with foil for easy clean up - there will be grease!
  • Increase the serving size to 4 and make 4 meatloaves. Bake one tonight and package the other 4 in individual freezer bags. Freeze until the day of serving then just remove from the freezer and let thaw all day in the refrigerator until you're ready to cook.
  • Use parchment or aluminum foil over the rack to keep the meat loaf from falling through. Poke small holes in the paper to allow the grease to drain off.
  • Check with a instaread thermometer after 8 minutes - air fryers may vary in how quickly they cook the meatloaf.
  • Cook until the internal temperature is 160F then let it rest for 5 minutes. During that time the internal temperature will rise to 165F.
  • If the top is getting too dark just cover with some aluminum foil.

What can you use instead of breadcrumbs for Keto?

My favorite substitution in meatloaf is Parmesan cheese - the shelf stable kind in the green canister. You can also use pork rind crumbs, almond flour, or chopped nuts.

Why does my meatloaf fall apart?

Not enough binding agents. Make sure you use egg as well as the Parmesan called for in this.

🥫 Storage

Since this feeds one person storage isn't usually an issue. If you do have leftovers you can refrigerate them for up to 3 days or freeze for longer storage.

Ingredients

  • 6 ounces ground beef
  • 1 teaspoon green bell pepper, chopped
  • 1 teaspoon onion, chopped
  • ½ teaspoon garlic, chopped
  • 1 egg
  • 4 tablespoons Parmesan cheese
  • 2 tablespoons Cheddar cheese, shredded
  • 1.5 teaspoons tomato sauce, divided use
  • Salt and pepper to taste

Instructions

  • Preheat the air fryer to 370F
  • Mix the ground beef, vegetables, and cheeses. You'll need to knead them in with your hands.
  • Beat the egg and 1 teaspoon of the tomato sauce.
  • Blend in to the meat mixture. The mixture will be a little wet but should hold its shape.
  • Shape into a small loaf.
  • Brush with remaining tomato sauce.
  • Place on a piece of parchment and add to the air fryer basket. Cook for 8 minutes. Check the internal temperature with an instaread thermometer. Cook until it's 160F in the center.
  • Let rest for 5 minutes. The internal temperature will continue to rise.

In the Oven

  • Follow instructions above but bake at 350F for about 20 minutes.

Notes

    I made this in my air fryer. It takes way more time than 8 minutes to reach 160 degeee internally.

      I imagine that there are differences in air fryers. You should always check the internal temp. It only took 7 minutes with mine.

    This looks fantastic, but does the Parmesan cheese used as a binding agent affect the taste as I'm not very fond of cheese except on cheese burgers.
