  • You can use boneless skinless chicken thighs instead of chicken breasts. Dark meat tends to stay juicier than leaner white meat, too!
  • Feel free to swap out the chicken with taco meat. You'll just need to brown the ground beef on the stovetop first before adding it to your slow cooker.
  • Homemade taco seasoning mix is easy peasy-you just need chili powder, cumin, paprika, garlic powder, onion powder, oregano, and cayenne pepper.
  • Substitute the water with a little chicken broth for even more yummy chicken flavor.
  • Serve slow cooker cool ranch chicken tacos in soft flour tortillas, corn tortillas, crispy taco shells, on top of a salad, or over rice. You can even create chicken taco salads!

Place chicken breasts in the bottom of a slow cooker greased with non-stick cooking spray. Sprinkle with a packet of taco seasoning and ranch dressing mix, then pour water on top.

Cover and cook on low for 4-6 hours. Shred chicken and stir in a little more liquid, then cook for 30 more minutes.

Ranch chicken tacos is the meal that keeps on giving-leftovers taste great! Refrigerate leftover cooked chicken in an airtight container for three to four days.

You can reheat your taco ranch chicken in a jiffy in the microwave or a saucepan on the stovetop until warmed through.

Freeze leftover chicken in an airtight container or freezer bag for up to three months. For best results, thaw frozen leftovers in the fridge overnight before reheating.

Ingredients

  • 2 pounds chicken breasts, boneless skinless
  • 1 ounce taco seasoning
  • 1 ounce Ranch dressing mix
  • ¼ cup water
  • 8 corn tortillas
  • Favorite taco toppings

Instructions

  • Spray slow cooker with nonstick cooking spray.
  • Place chicken in the bottom of the slow cooker.
  • Sprinkle with taco seasoning and Ranch dressing mix.
  • Pour in the water.
  • Cover and cook on low for 4-6 hours.
  • Shred chicken and stir into liquid in slow cooker. You may need to add a little more water - abbout ¼ cup at most.
  • Cook for 30 more minutes.

Storage:
Refrigerate leftover cooked chicken in an airtight container for three to four days.
Freeze leftover chicken in an airtight container or freezer bag for up to three months.
