🥰 Is this white chocolate cranberry bark recipe for you?
This recipe is perfect if you:
- Need an easy homemade gift that looks far fancier than the effort required.
- Want a Christmas candy that's ready with just a few minutes of hands-on time.
- Need one more treat for your holiday cookie tray without turning your kitchen into a complete disaster zone.
- Love make-ahead recipes because December has enough chaos already.
- Want a foolproof recipe that's almost impossible to mess up, even if holiday multitasking is your superpower.
Or, if you're just looking for an excuse to eat white chocolate straight from the pantry... I fully support your life choices.
I may not admit this in public, but those Ghirardelli white chocolate chips and melting wafers don't always make it into the recipe. Some of them bravely sacrifice themselves in the name of quality control. 🤍🍫
🧾 Ingredients
You only need three simple ingredients to make this festive candy. No candy thermometer, no fancy techniques, and definitely no degree from the Holiday Confectionery Academy.

- White chocolate. Skip the bargain bin. This is the star of the show so get the best you can find.
- Dried cranberries. Sweet-tart little jewels that keep every bite interesting, plus they're basically Christmas in dried fruit form.
- Pecans. Because this is Restless Chipotle and almonds or walnuts would probably get politely escorted off the porch.
You'll also need parchment paper or wax paper to make lifting and breaking the bark a breeze.

- 16 ounces white chocolate
- ½ cup pecans, toasted and chopped
- ½ cup dried cranberries
Instructions
- Line a baking sheet, cutting board, or large plate with parchment paper.
- Place 12 ounces of the white chocolate in a microwave-safe bowl. Microwave on high for 30 seconds, then stir. Continue microwaving in 30-second intervals, stirring well after each, until the chocolate is almost completely melted.
- Remove from the microwave, add the remaining 4 ounces of white chocolate, and stir until smooth. If needed, microwave for 10 to 15 seconds at a time until fully melted.
- Spread the melted chocolate into an even layer, about ¼-inch thick. Quickly sprinkle the chopped pecans and dried cranberries evenly over the top, gently pressing them into the chocolate so they stick.
- Let the bark stand at room temperature until firm, about 2 hours, or refrigerate for about 20 minutes.
- Break into pieces and store in an airtight container.

🔪 How to make white chocolate cranberry bark
No candy thermometers. No sugar stages. No dramatic moments where the recipe threatens your holiday spirit. Not even many dishes to wash. Just a few easy steps between you and a tray full of Christmas candy.

- Melt 12 ounces of the white chocolate in the microwave stirring often.
- Add remaining 4 ounces of white chocolate and stir to melt.
- When smooth pour into the prepared pan.
- Sprinkle with dried cranberries and toasted pecans. Chill.
😱 What can go wrong (and how to fix it)
🤶 The white chocolate got thick and grainy (seized up).
It got too hot or a little water found its way into the bowl. Melt it gently in 20-second bursts, stirring well between each one.
🤶 The toppings won't stick.
Add the cranberries and pecans while the chocolate is still soft, then gently press them into the surface before chilling. If the chocolate has already set, pop the pan into a warm (not hot) oven for a minute or two to soften it just enough for the toppings to grab hold.
🤶 The bark won't release from the pan.
Parchment paper is your bestie. If you forgot it, let the pan sit at room temperature for a few minutes before trying again. You can gently warm the bottom of the pan, too.
🤶 The bark shattered into tiny pieces.
Let it warm up on the counter for about 5 minutes before breaking it. You'll get prettier, more gift-worthy pieces.
🤶 The bark disappeared before you could package it.
This is a family management issue, not a recipe issue. Hide the next batch behind the frozen vegetables. 😉

This is a perfect recipe and I’ve been trying to create one that comes out like this one. I love it! I’d take it to gatherings of all sorts any time of the year. And it’s great as a holiday gift. I’ll be using this right along with spicy saltines (an appetizer), my Mexican wedding cakes and pizelles. All done gluten free!

You had me at white chocolate adding cranberries is another treat we like and adding pecans is like a done deal. The appetizer I usually bring are spinach balls and I never have any to bring home as they are gone in a flash.

I am always trying to figure out a treat gift for my sister and family as they cannot tolerate regular chocolate. They eat white chocolate though and this is going in their Christmas baskets for 2026! I also like the fact that this uses real white chocolate and not the "wafers". Thanks for this easy and pretty recipe!
