Rainbow Pancakes for St. Patrick's Day

Rainbow? For St. Patrick's Day?

Sure... see here is what happened. When I got up this morning I decided to make pancakes. I had the buttermilk batter all mixed up and the griddle heating when suddenly, out of the corner of my eye I saw a tiny leprechaun tiptoe across the counter with a bag of gold. There was rainbow dust still stuck to the outside of the bag! I stood very still and he tried to hide the bag several places in my kitchen before he disappeared.

The rainbow dust scattered everywhere and was swirling around in the air. It settled on my pancake batter and when I scooped the pancakes look what I saw!

O.k....that's MY story and I am sticking to it. If you are more pragmatic then read the recipe.

I have always loved to encourage my kids' imaginations... maybe too much. The older ones probably got more of it...I had more time, more energy and more creativity than I do now but once in awhile I manage to create a fantasy for the little ones.

I love hanging out with my kids, honestly would rather be with my family than anyone else. Other people can go to parties and get togethers but give me some popcorn, a Monopoly game and my peeps and I am a happy camper right here. My kids make me laugh, and they make me yell...but they are the best batch of kids in the known universe. I'll take them over leprechaun gold anytime.


These are very light pancakes and they are sweeter than most recipes. You can cut the sugar and vanilla out if you like for a more traditional pancake. If I had some edible gold glitter I would have added it to the plating. 🙂

Magical Rainbow Pancakes for St. Patrick’s Day

Ingredients

  • 3 cups all-purpose flour
  • 3 tablespoons white sugar
  • 3 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • ¾ teaspoon salt
  • 3 ¼ cups buttermilk
  • ½ cup milk
  • 1 teaspoon vanilla
  • 3 eggs
  • ½ cup butter, , melted
  • 2 – 3 tablespoons of colored sprinkles

Instructions

  • In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  • Beat together beat together buttermilk, milk, eggs and melted butter.
  • Heat a griddle until drops of water dance across it.
  • Fold the buttermilk mixture into the flour mixture.
  • Quickly fold in the colored sprinkles.
  • Scoop the batter on to the hot griddle and cook until bubbles form on the raw side and the underneath is golden.
  • Flip and cook until done.

    I don't see where you add that 1/2 cup of regular milk and also is this a really thin batter as there's a lot of liquid compared to dry ingredients

      It's added with the buttermilk. The buttermilk I use is very thick so ... this works for me.
