Basic Cupcake Recipe
This basic cupcake recipe is easy to adapt to create your favorite flavor. Change the flavor with extracts, add chocolate chips, or fill with your favorite filling.

Ingredients

cups
flour
all-purpose is fine. Use 1 cup flour and ½ cup cocoa if you want to make chocolate

teaspoons
baking powder
use 1 teaspoon baking powder and ½ teaspoon baking soda if you're using buttermilk

teaspoon
salt

cup
butter
room temperature

cup
sugar
, or packed brown sugar, or vanilla sugar, or lavender sugar...

eggs
room temperature
1 ½
teaspoons
vanilla
, or lemon, coconut, banana - any favorite flavoring

cup
milk
or buttermilk
Instructions
Preheat the oven to 350F.
Add liners to a 12 cup cupcake pan. Set aside.
Mix the flour, baking powder, and salt together.
(If you are using a variation you'll mix the dry ingredients except sugar in now.)
Add the butter to your mixer and
beat
on high until the butter is light and fluffy.
Add the sugar and
beat
until the sugar is well mixed in.
(this is where you'll add brown sugar if you are using it instead)
Add the eggs, one at a time, beating well after each.
Add the vanilla.
(Or any other flavoring)
Add ⅓ of the flour and
beat
until smooth with the mixer on low.
add ½ of the milk (or buttermilk) and mix until smooth.
Repeat with the flour, then the milk, then finish with the remaining flour.
If you are adding ingredients like nuts, chocolate chips, or dried fruit stir it in by hand now.
Spoon into the cupcake cups filling them halfway up with batter.
Bake for 18- 20 minutes or until a toothpick inserted in the center comes out clean - with only a few crumbs sticking to it.
Cool completely before frosting or filling.
Notes
Add ½ cups mini chocolate chips, chopped nuts, or dried fruit if desired.
