Buttery Lipton onion soup mix potatoes are roasted until tender with golden edges and plenty of savory onion flavor. This easy side dish is made with baby potatoes and just a handful of simple ingredients with about 5 minutes prep time and 20 minutes in the oven.
Preheat oven to 425℉ and cover a baking sheet with foil or parchment.
Melt the butter in a large, microwave safe bowl.
Add in the potatoes and roll them around until they are well covered with the butter mixture.
Sprinkle with the Lipton Onion Soup Mix and garlic powder.
Place in a single layer on the prepared baking sheet and bake in the preheated oven for 20 to 25 minutes, turning once.
Place in a serving bowl, sprinkle with thyme or parsley, and serve.
Air Fryer Instructions
Prepare the potatoes as directed. Place them in the air fryer basket in a single layer and air fry at 400°F for 10 to 15 minutes, shaking the basket halfway through. Cook in batches if necessary. The potatoes are done when golden brown and fork-tender.

Storage:Store leftover onion soup mix potatoes in an airtight container in the refrigerator for up to three days. Potatoes do not freeze well.Tips:
Spread the potatoes in a single layer with a little space between them. Crowding the pan makes them steam instead of roast.
Stir halfway through roasting so the potatoes brown evenly on all sides.
Check for doneness with a fork. The potatoes are ready when they're golden brown outside and fork-tender inside.
