Mexican Spagetti Skillet

  • 1 Pound of spaghetti , broken, cooked, and drained
  • 1 pound of ground beef , seasoned with salt and pepper
  • 1 cup of chopped onion
  • 6 ounces cream cheese
  • 1/4 cup half and half cream
  • 2 14- ounce cans Ro*Tel tomatoes and chiles
  • 1/2 cup salsa (plus more for the topping)
  • 1/2 teaspoon smoked paprika
  • 2 cups shredded sharp cheese


  • Cook the ground beef and onion until the onion is soft and translucent and the beef is cooked through.
  • Drain any fat from the ground beef in the pan.
  • Add the cream cheese and half and half.
  • Stir over low heat until the cream cheese melts into the cream and is smooth.
  • Add the Ro*Tel and smoked paprika and blend.
  • Now add the pasta and 1 cup of the cheese.
  • Warm through.
  • Top with the remaining 1 cup of cheese before serving.
