Ingredients

Pound
of spaghetti
, broken, cooked, and drained
1
pound
of ground beef
, seasoned with salt and pepper
1
cup
of chopped onion
6
ounces
cream
cheese
¼
cup
half and half
cream
2 14-
ounce
can Ro*Tel tomatoes
½
cup
salsa
(plus more for the topping)
½
teaspoon
smoked paprika
2
cups
shredded sharp cheese
Instructions
Cook the ground beef and onion until the onion is soft and translucent and the beef is cooked through.
Drain any fat from the ground beef in the pan.
Add the
cream
cheese and half and half.
Stir over low heat until the
cream
cheese melts into the
cream
and is smooth.
Add the Ro*Tel and smoked paprika and blend.
Now add the pasta and 1 cup of the cheese.
Warm through.
Top with the remaining 1 cup of cheese before serving.
