Notes
Storage:Cover the baking dish tightly with plastic wrap. Be careful of foil because the acids in the sauce can react badly with it. You can also transfer leftovers to a separate storage container.Keep the meatloaf refrigerated for three to four days. You can also store it in the freezer for up to three months.Thaw frozen meatloaf in the fridge for a day or two. Then, heat individual pieces in the microwave until hot.Tips:
Don’t pack the meatloaf too tightly, or overwork it—the meatloaf will be tough. Just combine until everything’s mixed together and gently form it into the pan.
Dry bread crumbs aren’t just used as filler. They absorb the fat (and flavor!) from the meat as it cooks, keeping your meatloaf juicy and delicious. Don’t skip ‘em!
If your meatloaf tends to fall apart, be sure to follow the recipe closely. Using the right amount of milk, breadcrumbs, and large eggs helps bind the meatloaf together.
Let it rest! Don’t cut into the meatloaf straight out of the oven. Give it ten minutes or so before digging in.
Heinz 57 meatloaf is a great recipe to prep in advance. Form the meatloaf in an aluminum foil tray and freeze it, uncooked. You can also give the meatloaf away to new moms or friends who aren’t feeling well as an easy freezer meal.
