Easy, slow cooker smoked sausage and potatoes recipe has almost no prep time! This cheesy casserole cooks all day in the crockpot and is ready when you are. Delicious comfort food for the whole family!
3cupscheddar cheeseshredded (or a mixture of cheddar and pepper jack)
10.5ouncescream of chicken soup
½cupsour cream
1ounceonion soup mix
2teaspoonsCajun seasoning saltTony Chachere's
¼cupwater
salt and pepper to taste
Instructions
Spray the inside of your slow cooker crock with no-stick cooking spray.
Dice potatoes and onions and add to the slow cooker.
Slice the smoked sausage and add on top of the vegetables.
Sprinkle with 2 cups cheese.
In a separate bowl, combine cream of chicken, sour cream, onion soup mix, and cajun seasoning.
Whisk until smooth.
Pour over potato mixture and stir to combine.
Pour the water into the slow cooker.
Cook on low for 7 ½ hours. Add the remaining cheese, replace the cover, and cook 30 minutes.

Storage:Keep leftover casserole covered in an airtight container and refrigerated for up to 3 days.This recipe doesn't freeze well. The potatoes can take on a weird texture.Tips:
