cream
of chicken soup

sour

taco seasoning

boneless skinless chicken breasts
cooked and shredded (or cubed)

tortilla chips
crushed

cups
shredded cheddar cheese
divided

green onions
sliced

cup
cilantro
chopped (optional)
Instructions
Preheat oven to 350 degrees.
Spray a 9 x 13 inch baking pan with no stick cooking spray.
In a large bowl combine the chicken soup, sour
cream
, RoTel, black beans, taco seasoning and chicken.
Set aside.
Coarsely crush the tortilla chips and spread half of them on the bottom of the prepared dish.
Spread half of the chicken mixture over the tortillas.
Top with 1 cup of cheese.
Repeat layers.
Cover the baking dish with aluminum foil.
Bake for 30 minutes - remove foil.
Bake for 10 minutes, until bubbly and cheese is starting to brown.
Top with cilantro and green onions before serving if desired.
Notes
Expert Tip:
I recommend using Doritos in this casserole as they give the best flavor and color to this recipe.
This recipe is an excellent way to use leftover rotisserie chicken, just make sure that it is a neutral flavor.
You can also use some of the
tequila lime chicken
for this recipe.
If you are not a fan of cilantro feel free to leave it out.
I like to add toppings such as lettuce, sour cream, diced tomatoes, green chilies, black olives, and extra shredded cheese when serving this dish.
Next time, add in fresh bell peppers when layering your casserole dish for extra flavor and color.
Salsa or even salsa verde can be used in place of the Rotel if you don't have it on hand.
