Sweet, homemade strawberry butter is simple to make with just three main ingredients! This real fruit butter is delicious on warm biscuits and muffins - or serve it on popovers like they do at Neiman Marcus!
½cupstrawberriespulsed in a food processor to a puree
¼cuppowdered sugarmore as desired
1tablespoonlime zestoptional
1 tablespoonstrawberry jamoptional - adds more flavor
½teaspoonvanillaoptional
Instructions
Whip the softened butter and powdered sugar together.
Mix in the jam, lime, and vanilla if you are adding these ingredients.
Fold in the strawberry puree.
Refrigerate in an airtight container until firm. Or, for slices, you can roll it into a log shape and wrap tightly in wax paper twisting the ends to seal.
Use as desired.
Notes
Expert Tip: Be careful. The butter will pick up refrigerator or freezer odors if the fridge isn't clean. Don't put it in the freezer with fish!
Have all the ingredients at room temperature - they'll blend better.
Mix the butter and powdered sugar before you add the berries - it will be smoother than way and less likely to separate. I learned this the hard way!
For the best flavor the strawberries should be good and ripe.
Don't blend the berries into mush - pulse to make them finely chopped.
Adjust the amount of confectioner's sugar to your own tastes.
You can form the strawberry butter into logs and slice as needed.
It will keep about a week in the refrigerator - longer in the freezer.
Like any butter, this fruit butter will take on off flavors from refrigerator smells.
