Damntastic Barbecue Sauce
A creamy, spicy barbecue sauce that has been around for at least sixty years. Once you taste it you'll know why.

Ingredients

teaspoons
kosher salt
½
teaspoon
pepper
⅓
cup
brown sugar
½
cup
catsup
2
tablespoons
Gulden's brown mustard
2
tablespoons
Worcestershire
3
teaspoons
liquid smoke
1
cup
mild beer
(I like Rahr Texas Red)
⅓
cup
cider vinegar
2
teaspoons
Tabasco
(more or less depending on the heat you want)
¾
cup
melted unsalted butter
¼
cup
bacon fat
Instructions
Add all the ingredients except the butter and bacon fat to a saucepan and heat, stirring often.
Just when bubbles start to form on the surface whisk in the butter and bacon fat until everything is well mixed.
Simmer
slowly, whisking often, until the mixture reduces and becomes thick - about the consistency of heavy
cream
.
Taste and adjust seasonings.
Serve over hot brisket, or use it to
baste
short ribs during grilling.
Notes
Do not at sauce to brisket until after it is smoked but use it during cooking when grilling ribs.
