Cheesy Crockpot Chicken and Rice
Slow cooker cheesy chicken and rice is the ultimate comfort food for busy weeknights! All the creamy goodness of old fashioned chicken and rice casserole but made in a crockpot with an cheesy sauce!

chicken breasts
boneless & skinless
1
ounce
Lipton's onion soup mix
or your favorite

condensed nacho cheese soup
1 ½
cups
rice
any kind is fine

sour
cream

Velveeta cheese
cubed
Instructions
Place chicken in the slow cooker.
Sprinkle with onion soup mix.
Top chicken with nacho soup.
Cover slow cooker and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours.
Using two forks, shred cooked chicken in the slow cooker.
Stir in sour
cream
and Velveeta cheese.
Cook rice according to package directions. This will be different for different types.
Stir into shredded chicken and cook until cheese has melted.
Notes
Storage:
Store extras in an airtight container for up to three days in the refrigerator or freeze for up to 3 months.
Tips:
Don't forget to cook the rice before mixing it into the creamy chicken. There isn't enough liquid in this recipe to handle uncooked rice.
Use a rice cooker for perfect rice every time!
You can cook your rice in low-sodium chicken broth (instead of water) to give it more flavor.
Transfer the chicken breasts into a large mixing bowl for easy shredding.
If you opt to shred the chicken while it's still in the crock pot, just be careful not to burn your hands or arms on the hot sides!
Make a pulling motion with two forks to shred the chicken. Slow-cooker chicken shreds so easily, though, so it will take hardly any effort!
