Hot Keto Spinach Dip
Keto friendly! Rich and creamy low carb spinach dip is served hot with plenty of gooey cheese! It's easy to make and has just 3 net carbs per serving!

tablespoons
butter
2
cloves
garlic
peeled and chopped

ounces
baby spinach
¼
cup
parmesan cheese
shredded

Pepper Jack cheese
shredded

cream
cheese
⅓

sour
cream
salt and pepper to taste
Instructions
Spray a 1.5 quart baking dish with nonstick spray. Set aside.
Melt the butter in a heavy skillet over medium heat.
Stir in the garlic and spinach. Cook and stir 2 to 3 minutes, until spinach is wilted.
Remove from heat.
Soften
cream
cheese in microwave.
Stir in sour
cream
then add to the spinach mixture.
Stir in the Parmesan and Pepper Jack cheese.
Transfer mixture to the prepared baking dish.
Bake at 350 degrees F for 20 minutes, or until bubbly and golden brown.
Notes
Expert Tip:
While cooking the garlic be sure to stir it often so that it doesn't burn and turn bitter.
For this dip, I recommend shredding your own cheese so that the anticaking agent doesn't make your dip gritty.
Using room temperature cream cheese works best for this recipe.
Artichoke hearts can be drained and added to this recipe if you want to add something extra.
If you are out of fresh or minced garlic, garlic powder can be used instead.
Leftovers are amazing in omelets or to top burgers!
