Slow Cooker Swiss Steak Texas Style
Swiss steak Texas style with Ro*tel, cilantro, and some kick. The guajillo is a dried pepper that is sweet, spicy, and fruity - think of a spicy raisin. It gives great flavor to this dish.

Ingredients
3
lbs
of roundsteak cut into serving sized pieces
1 ½
teaspoon
garlic powder
1
teaspoon
cumin
Salt and pepper
⅓
cup
flour
⅓
cup
olive oil or peanut oil
4
cloves
garlic
, crushed
2
can Ro*Tel tomatoes
1
large onion
, cut into strips
1
large bell pepper
, cut into strips
1
poblano pepper
, cut into strips
1
guajillo pepper
, seeds removed
3
carrots
, cut into a large dice
3
stalks celery sliced
⅓
cup
chopped
, fresh cilantro
1
teaspoon
liquid smoke
Louisiana hot sauce to taste

Rahr Texas Red beer or your favorite local amber lager.
Instructions
If the steak is large cut it up into serving sized pieces.
Season, to taste, with garlic powder, cumin,salt and pepper.
Dust meat with flour.
Pound on both sides with the mallet.
Add the oil to the skillet and let it get hot.
Quickly
saute
the onion, pepper, poblano,carrots, celery, and garlic.
Remove the vegetables to the slow cooker.
Toss in the guajillo.
Add the meat and brown it on both sides. You can add a little more oil if you need to.
Add the meat to the slow cooker.
Pour in the tomatoes, liquid smoke, hot sauce, cilantro, and beer.
Cook on low for 8 hours.
Remove guajillo before serving.
