Breakfast Burritoes for Freezing
Easy breakfast burritoes that you can store in the freezer for up to three months. It's an easy breakfast on the go Tex Mex style.

Ingredients

eggs
⅔
cup
of milk
8
ounces
of bacon chopped
, or sausage
1
cup
chopped onion
, optional
½
cup
chopped poblano pepper
, optional
2
teaspoons
taco seasoning
Salt and Pepper to taste
1 ½
cups
grated cheddar cheese or Pepper Jack

Burrito Sized flour tortillas
Instructions
Beat
the eggs and milk together until
well blended
.
Cook the bacon or sausage in a large, heavy skillet.
Remove from the skillet and drain off all but 2 tablespoons fat.
Add the onions and peppers to the skillet and
saute
until tender.
Pour in the egg and stir over medium low heat until the eggs are scrambled.
Stir in the taco seasoning and cooked bacon (or sausage.
Warm the tortillas until they are flexible.
Add a few tablespoons of the egg mixture down the center of a tortilla.
Cover with a tablespoon or so of the cheese.
Fold
the sides in and then roll tightly to seal the filling inside.
Roll in Glad Press 'n Seal.
Repeat with remaining ingredients.
Freeze until ready to use.
When ready to cook
Microwave for 1 to 2 minutes or until heated through
